Notes: 1L Starter of each yeast - WLP530 (Abbey Ale) and WLP550 (Belgian Ale)
Last brew, I only added two packs of the WLP530 and I think it was stressed a little too much - definite acetaldehyde during fermentation. Only slight hints of it on the nose after aging.
Ferment at 70F for the first two days, slow rise (1F/day to 75F), and ferment at 75F until completion. Drop temp to ~66F when within a few points of target and let it rest/age until approximately 5 weeks in primary, then I'll wait for it to tell me when it's finished. |

Notes: I ferment in a keg so this is what I do.
Pitch yeast at 74 while continuing to cool to 65. Use a lid with an airlock for first day of active fermentation. Allow temp to rise to 68. On day 2 put on a corny lid and spunding valve. Set pressure at 5 psi. At this point temperature can rise to 70. With gravity 10 points left set at 15 psi. Once you hit FG take off spunding valve. Any extra co2 with help you get a little better carbonation if you want it. If you don’t then leave it set at 15 psi. After 3 days of no gravity change transfer to serving keg and chill |

Notes: mash as usual, collect wort and boil for 15 mins, cool to ~100, add lactic acid to adjust pH to ~4.5, add good belly, blanket with CO2 and saran wrap, when taste/pH acceptable (3.2-3.3) boil for 15 min w/ hops and cool, transfer to fermenter and pitch yeast
For 644, pitch at 75 degrees and ramp to 78 after 2-3 days of fermentation. Give starter several days to build up. Under pitch slightly and possibly no aeration for a fruitier result. may need to let sit in fermenter for longer than normal to achieve FG. (Ferment in upper 70's)

Changes since last brew:
* Slightly increased grain bill (was a little thin last time)
* Reduced mash and boil to 60 mins (90 mins seems unnecessary)
* Avoid starter, just smack pack night before (trying to avoid problems with yeast)
* Make sure to keep a little yeast in the keg (otherwise to clear)
* Reduce coriander dose and time
* Revert fresh orange peel to dried
Instructions:
* Mill all grain (including flaked grain)
* Chill the wort rapidly to 20 °C, let the break material settle, rack to the fermenter and aerate thoroughly.
* Begin fermentation at 18 °C slowly raising temperature to 22 °C by the last one-third of fermentation.
Notes:
* First reference suggests starting with a protein rest (15 min @ 50C), then slowly ramping up to 68C over 15 min to start the sacchrification rest, but second ref says you get just as good results from a single temp mash. So lets start with the simple version and try the more complicated one later.
* The total wort boil time is 90 minutes, which helps reduce the SMM present in the lightly-kilned Pilsner malt and results in less DMS in the beer. This also means we go for a higher kettle volume to compensate for extra evaporation loss.
