Notes: Aiming for something like Hobgoblin Gold. If not a little more citrusy.
Using left over crusts (4 slices or 180 g) Toasted and torn and added to the mash. Whole meal malted and seeded bread.
Using Citra for my primary aroma and flavour hop. Casacde will provide most of the bittering. I usually go for First Wort Hop additions for this bittering purposes, but, in my next brew a NEIPA. I will be using only later additions, so this is a kind of trial run with this.
I will have 4 litres of chilled water in the fermentor to reduce the bitterness this time. If need be I have 2 more litres to adjust the volume to 20 litres.
Post boil size actually 12 litres. 6 litres chilled spring water added, plus 3 litres tap water. Should guarantee wort temp was rapidly below 79c though.
Whirlpool hop additions added to fermentor. At first boiling temps then after cold water added probably below 79c so more of an Aroma Steep than a whirlpool.
OG 1.037 almost bang on target.
Took 36 hours for temp to drop to 19c. Pitched rehydrayed yeast.
Wait for Primary Fermentation to die down and take out Citra whirlpool/aroma steep hops.
Day7 took hops out. Gravity reading 1.008 so not far off target. 1 more week should get it there.
Very warm days...fermentor was reading 21c...
Day 10 Gravity 1.005. Added dry hops, plus about 10 grams of new hop Endeavor. Sourced in the UK. Whole leaf. We shall see....
Day 13 1.005. No movement. Will bottle tomorrow. Colour is lovely.
Endeavour hop aroma is very strong blackcurrant/berries. Can't wait to try this.
41 bottles. Now conditioning at 18c-22c
Slightly concerned that it won't have enough bite. Will have to see.
Sample tasted good. Decent bite. Not massive, but I didn't want massive bite. Opening the fermentor the berries aroma from the Endeavour hop was huge. But from the sample, not much really. Will have to see if there is more from the bottles in two weeks.
Had a cheeky sample of this om day 6 after bottling. Carbonated already (decent head and lacing) and no off flavours at all. Tastes a bit more Hobgoblin Dry Neck. It's a much lighter beer with not much malt complexity. But, it hasn't yet had proper time to condition so maybe this will improve a little. As it is, it is a good thirst quencher/ session ale. |

Notes: Pre Brew Notes: This is an improvement on the Nightengale Pale Ale that I brewed. The idea is to add more fruitiness into the beer through use of American hops. The English hops are still present to give it a consistent flavour. Hopefully this beer will turn out tasting of tropical fruit and hold a medium, sweet body (due to the 120L). (I was drunk on the previous Nightengale when I produced this recipe). Because of the added 120L, the base malt has to be LOW COLOUR Maris Otter, not the regular.
12/06/17 BREWDAY - Mashed in for 1 hour with 7.75l of 64 degree strike water. Grain bag then rinsed with 0.45l of water before boil.
OG: 1.051 coming out thick and light red.
ABV: 6.5%
Tasting notes: After 2 weeks in bottling the carbonation is perfect. Slight umami flavour there which is suspected to be just from the brewkit. Head retention, colour and malt profile perfect so keep the same. Hops need to be amped up though, next time this is brewed, double the hop amounts. ABV is perfect for the style but use of more hops would balance this out and possibly get rid of that umami flavour. Also, try substituting the Goldings for Pacific Jade or Hallertau Blanc, that might be where it's coming from. It aint the best, kid, but it'll get ya drunk. |
