Notes: Heat water to 47 degrees centigrade then add grains. This will lower the temperature to 45 degrees. Let it rest for 15 minuts then start to increase the temperature to 65 degrees. Allow for a 15 minut rest at 53 degrees centigrade for protein rest due to the amount of wheat. After concvertion increase temperature to 77 degrees for mash out.
Remove bag and batch sparge in seperate container, add wort back to pan.
Single stage infusion: 64 degrees for 60min.
Boil time: 90mins. |

Notes: Submitted to the 2022 Maryland State Fair competition and received a score of 29. Judges detected a slight diaceytl in the beer and I think it's because I did not let it ferment long enough (10 days). Plan to make this beer again and let it ferment for 14 days. Everyone who tasted it loved it and could not detect the diacetyl.

Notes: Mash at 63°C for 60-90 minutes, drain, and sparge to yield 19L. Transfer into the boil kettle and pasteurize at 82°C for 10 minutes.
Allow the wort to cool to 43–49°C, and pitch your Lacto culture. Kettle sour to the desired perceivable acidity level - 18-36hrs, should be sharply sour.
Boil for 15 minutes, adding hops at the start of the boil.
Chill, pitch the ale yeast and ferment at 18°C. After completing fermentation, transfer to secondary with cucamelons for 24-48 hours.
Package to 3.5 volumes of CO2. |

Notes: Per il batch sparge, si analizza in più step il ridursi della densità totale interrompendo più volte il processo di run-off del mosto di risciacquo (previo omogenizzazione con il mosto fiore), fermandosi quando si è raggiunti o la densità limite di 1048 indipendentemente da quanto raccolto o il litraggio ipotizzato prima della bollitura = 25LT
Dello starter non viene aspirato il liquido ma viene gettato tutto nel fermentatore. Fatto partire lo starter per 8ore senza acqua di sifone.
Buona ossigenazione. Togliere il gorgogliatore sul fermentatore primario appena parte la fermentazione e rimetterlo dopo qualche giorno (coprendo il buco con della carta stagnola sanizzata)
Aumentare la temperatura dal secondo giorno di fermentazione: 2gg a 26°C, 2gg a 27°C e poi 28°C fino a fine fermentazione. |
