-turned out to be 21 liters
-lot's of mistakes made at mashing
-it was very well balanced, not dry, not sweet (but rather sweet than dry), and just perfect amount of bitterness, cannot feel the high alcohol by taste
-did not add honey at secondary because of high OG, also no vanilla beans
-6,17% (OG: 1.053, FG: 1.006)

- Started recirc pump after 1st 45 minutes at the 152 degree mark
- Boiled for 60 min, then started hop schedule
Added 3lb frozen mango's after 1st fermentation mostly done. Prep, make a puree with 1cup of h2o hold at 180degrees for 30 min, cool to 70 and add to fermenter

Reading = 8 @ 70deg converts to 1.0148. Likely done but this is where I added the 3 lbs of pureed frozen mango's. I pureed with a little water and heated to 180deg in a pan. held it there for 10min. Cooled to 75 and added to wort

ACTUAL ABV 1.063-1.014 = 6.43%
- So far people love it. They say the mango cuts the bite of wheat but doesn't taste fruity. A few said it tasted like hoegarten.

Notes: Per il batch sparge, si analizza in più step il ridursi della densità totale interrompendo più volte il processo di run-off del mosto di risciacquo (previo omogenizzazione con il mosto fiore), fermandosi quando si è raggiunti o la densità limite di 1048 indipendentemente da quanto raccolto o il litraggio ipotizzato prima della bollitura = 25LT
Dello starter non viene aspirato il liquido ma viene gettato tutto nel fermentatore. Fatto partire lo starter per 8ore senza acqua di sifone.
Buona ossigenazione. Togliere il gorgogliatore sul fermentatore primario appena parte la fermentazione e rimetterlo dopo qualche giorno (coprendo il buco con della carta stagnola sanizzata)
Aumentare la temperatura dal secondo giorno di fermentazione: 2gg a 26°C, 2gg a 27°C e poi 28°C fino a fine fermentazione. |
