Notes: Revised recipe based off of my first brew of Atomic Pumpkin.
(2) 29 oz cans 100% pure pumpkin puree in blender with hot water then strained to produce a juice. This produced approximately 1.5 gallons of juice which was put into the mash water.
Added 2 cut habanero peppers in bag at 20 minutes.
Add brown sugar at 15 minutes.
2 tsp Saigon Cinnamon at flame-out.
Add 2 cut habaneros tincture in spiced rum mixed with 1 tsp Saigon Cinnamon towards end of ferment. |

Notes: Base golden sour recipe to make fruited kettle sours, inspired by MTF's RareBarrel recipe posting:

Make lacto starter 24hrs in advance of brew day.
Add lactic acid to mash until PH of 4.5 is achieved.
Cool wort to 100F to pitch lacto and kettle sour around 80-100F until PH of 3.3 is achieved.
Bring kettle to boil for 10 mins, cool and add whirlpool hops, transfer to primary and pitch yeast.
Rack onto 4-8 pounds of fruit puree as fermentation slows (~5 days).
Let fermentation continue of fruit in secondary for another 4-8 days, or until desired flavor is achieved. |

Notes: Golden promise malt came in before I was ready, so throwing this together a bit hastily. Basing this off of the NEIIPAs I made recently, which turned out pretty good, but this is different yeast and flipping the ratio of oats:wheat (more wheat)
Tastes great after 1 week in bottles, tried two one smelled amazing and was smooth, the second was much more carbonated to the point of taking away from the hop aroma/taste. Probably should keep the priming sugar down next time (2.3 this time, 2.1 on similar recipes was better) |
