Notes: gA huge yeast starter to make this Saison Dupont culture smash the attenuation and not stall out.
I will also be using my Inkbird controlled fermentation fridge / heater to maintain a hot fermentation.
first two days of fermentation 24C, 30C thereafter until completely attenuated. If yeast stalls I will add dry champagne yeast for a dry finish.
I fermented for around 10 days at 30C

Notes: Add 1/4 tsp of amylase to raise diastatic power to compensate for low-enzyme grain bill. Started w/ Bill's Double Chocolate Milk Stout as a reference recipe.
2 weeks after bottling very bitter/roasty and unbalanced. Definitely will want to dial back roast barley by half (or even all), and ditch some of the chocolate malts as well. Might also need to adjust water chemistry (most notably pH toward the alkaline) for future attempts as well. |

| Notes: 9/5/2021: I didn't insulate the mash, so it dropped to 143F. I fermented in the kettle, since I read kveik likes air and is sometimes fermented open, anyways. I harvested early -- 24-ish hours, but I probably should have waited a bit more: it kept producing a little yeast on the top. Finally kegged a little after 48h, 12psi, 45F. |

I won a 55 lb bag of 2 row in the COTU wort share competition. When I made this beer my scale broke so I had to use the scale from our bathroom. It was a bit challenging and inaccurate which I believe was the cause for the low OG.
