Notes

9/5/2021: I didn't insulate the mash, so it dropped to 143F. I fermented in the kettle, since I read kveik likes air and is sometimes fermented open, anyways. I harvested early -- 24-ish hours, but I probably should have waited a bit more: it kept producing a little yeast on the top. Finally kegged a little after 48h, 12psi, 45F.
