adding the simple sugar to fermentor not during the boil but a couple days into fermentation. will probably dissolve in a little water.
meanwhile trying to hit the official hardywood singel stats : OG 1.056 ABV 6.2 SRM 4 IBU 30. I sense a little woodey or piney something in the beer so im adding a little more hops plus a flameout addition. adding decent amount of light crystal malt to try to achieve a little sweetness without sacrificing the color. probably gonna mash at 150 but try to stay on the cool side.
there is a kind of sour taste to the beer too so im not sure how to achieve that, but likely through yeast selection. still looking at yeasts...would oberon yeast be a candidate?
ogg tony suggests White Labs wlp500
aa on hallertau hersbuckler in this app was way different than german hallertau from the store so i bought too little hops. substituting east kent goldings a little in the bittering addition.
planning to add the sugar to minimal water (pint or two) bring to boil and boil down as much as possible. chill then add to fermentor on day 4 or 5. |

Notes: Don't be skeered.
Beta gluc rest at 105F for 20-30 min. Sacch rest at 150F for 60 min. Add the 0 min hops, swirl and cover for 30 minutes. Drop the temp quickly, pitch at 68F, raise to 70F at peak of fermentation, and let sit in primary for a total of 14 days. Cold crash for 2 days to 40F, rack to secondary and then bring back to 70F for dry hopping. 3 day dry hop. Bottle and condition for 21 days at 70F. |

Notes: Yeast had expiration date a month ago , I had two packages so I added both. Tossed them in some RO water as the package suggested and about 1/2 hour later it was crawling out of the jar so I guess it was good.
I just buy kits from Northern Brewer, I add one extra pound 2 row to the kit to meet the Original gravity. This time it I came out about 8 points high... |

Notes: This beer almost meets the BJCP requirements to be called an Irish Red Ale. The disqualifying factor is the ABV of 6%. An Irish Red Ale is characterized by an ABV of 3.8-5%
This beer is on the sweeter, more caramel noted side of Irish Reds. Hops bitterness meets the minimum requirements at 18% with forward floral and herbaceous notes, and spicy earthy background aromas. Minimal heavily roasted malts (in this case chocolate) were used to increase drinkability and soften any roasted, dry biscuit, toasty notes. Head should be persistent and aggressive.
Be EXACT with the grain weights or the SRM will be drastically altered.
Cell count of pitch must be between 3-4x as much as a single packet.
Best served in a Thistle Glass (as shown in picture) - also known as a Scottish Ale Glass. The thistle glass is a variation of the tulip glass designed specifically to look like a thistle. The glass is relatively tall, often holding between 15 and 20 ounces making it slightly larger than your average tulip. It features a long stem, pronounced bowl (or bulb), and is topped with flaring sides. The design is specifically meant to resemble Scotland’s national floral emblem which provides a pretty direct clue towards its usage. |

Pitch the yeast with the wort temperature at or just below the minimum recommended temperature (65F) and let it rise slowly over the next 4 days to the high end of the range (upper 70s). This will help balance the variety of flavors that a particular yeast is capable of producing at different temperatures. Yeast can generate heat up to 7-9 degrees above the ambient temperature during fermentation, so you need to keep the ambient temperature below the minimum fermentation temperature for the first couple of days so the wort does not get too warm too fast. |

Notes: this is the first attempt at somewhat of a clone of Mayflower Brewing's Thanksgiving Ale. Disclaimer, not from New England, have not tasted the beer before; just trying to target something similar.
mash additives are for adjusting my local water profile to match a "balanced profile", and for pH.
hoping to ferment at about 66F, and age for 4 weeks or so with oak chips, vanilla beans and roasted spicy mixed nuts.
then keg and carb in time for t-giving.
UPDATE: after brewing this beer, I ended up using 2oz of the oak chips, and let them age for the 4 weeks indicated. This seemed like way too much. In the end, it’s all I could taste. If I brewed this again, I would scale back the oak chips. |
