Notes: 8/5/23-Monster Brew from Scholb. OG: 1.045, ABV~30 from Cascade. Added 2oz Hallertauer Magnum 12.9 @170F WP.
5/6/23-Mash was 240 minutes. Motueka only 1-60, 1-WP180F, 2-DH40F_2days. Pilsner & Brown Rice (Raw/Cereal Mash). Water Calcs are: Mash/Strike-6g Gypsum/CaSO4, 2g Epsom/MgSO4, 1g NaCl/Salt, 2g CaCL, 3ml Phosphoric 85%, AND Sparge-1ml Phosphoric 85%. So many issues this day with a double decoction and clogged filters, leaking cooling hoses and glycol chiller not chilling; not sure if this is going to work or not.
5/28/22-5G from Smog City Brewings Monster Brew Day. 1.046/25IBU. Hallertau Magnum and Saaz 2oz@/20MinWP, and a 2L pitch. Will only bring it up to 170F for the WP and add hops. Decent flavor, very light. I think it needs more body and more hops. Don't do lagers without dry hops anymore. Yeast is a little fruity, Maybe ferment colder?

1# of cereal mash jasmine rice. changed the hops. Using Maris Otter. Changed the yeast, made a starter. I am going to use my pale ale minerals/acids since the RO system isn't up yet.
Mash: 2.5ml Phosphoric, 4g Chalk, 3g Epsom, 9g Gypsum
Sparge: 4ml Phosphoric
Boil: 3ml Phosphoric
3/18/22-Tapped. Flavors of cracker, lemon, jasmine flowers, minerals. Dry, no bubblegum! Yay! This was really good. Used Saaz/Huell Melon in equal bits. |

Notes: BATCH-SPARGE STEPS
1. Increase grain quantities by 1.06x.
2. Mash with 2.38 gal water.
3. After mashing, add 1.86 gal water.
4. Stir and allow to rest a few minutes.
5. Recirculate wort till clear.
6. Run off 3.25 gal wort @ 1.096 SG.
7. After runoff, add 3.25 gal water.
8. Stir and allow to rest a few minutes.
9. Recirculate wort till clear.
10. Run off 3.25 gal wort @ 1.022 SG.
Honey added at flame out.
Place honey bottles in warm water to make honey runny before adding to kettle.
Calculation for displacement of liquid from addition of honey.
BV – (H / 12) = WV
Where BV is the target batch volume in gallons (the volume left after the boil), H is the quantity of honey in pounds, and WV is the wort volume (in gallons) you should transfer from the kettle to the fermenter.
Total volume of wort after boil = 5.5 gallons
adding 6 lbs of honey at the end of the boil will result in 6 gallons to the fermenter.

| Notes: Apart from this beer being undercarbonated (my error!!!) it is my best yet. The Simcoe and Galaxy hops really work well together as did the grain bill. This beer reminded me of some of the American bottled IPA's on sale at the moment - Goose Island as an example. Well chuffed!! |

Notes: Saison ble i gamle dager laget på gårder i det fransktalende Wallonia i Belgia på vinterhalvåret, og lagret sånn at sesongarbeidere skulle ha en leskende drikk når de jobbet på jordet til våren.
Ølstilen har vært langt vekke en lang periode, men har blitt vekket til liv igjen i revolusjonen av håndlagd øl som vi nå opplever.
De gamle saison-ølene var gjerne svake i alkohol (rundt 3%) for å være mer leskende enn berusende, men etter revitaliseringen av Saison har dette endret seg noe. En saison er en lettdrikkelig øl som opprinnelig er uten spesiell humleprofil, men som får krydderaktig smak av gjæren, da spesielt om dette gjæres på temperaturer opp mot 26 grader.
Saison er ofte tåkete, har mye kullsyre og er tørr.
I dette ølkittet får du en veldig ren og "crispy" saison, og en god ettersmak av gjæren. Du vil få mer kryddersmak desto høyere opp i temperatur du kommer under gjæringen, men det er viktig å starte på normal temperatur 18-20 grader. La den stå i den temperaturen i minst 2 dager, før du eventuelt øker temperaturen. Øk en grad om dagen til du når 26 grader og hold der til ønsket gravity. |
