Notes: Brewed using the 20L Braumeister.
Great body with nice mouth feel. Perfect lacing on the glass, slightly sweet with caramel notes from the amber malt. Good balance from the hops, they work well together. Not bitter but lovely hoppy after notes on the tongue. Not much on the noise which is weird. |

Notes: A pretty strait forward ale and a great beer to use to build a yeast cake to pitch a huge stout onto. This beer is traditionally cask conditioned but very clear so S-04 would also be a great choice for yeast.

Notes: This recipe is Vienna Lager style but boosted a little bit in IBU to counter balance the malty side.
Adapt the mash volume with the dead volume of your tun.
I use a Klarstein 50L brewing machine which has 6.5L of dead volume under the tun basket => take it in account for the mash thickness :
Strike water volume at mash thickness of 3 L/kg * 5.15kg + 7L = 22.5L (new mash thickness = 3.7L/kg)
Sparge water = 9.2L
Total water = 31.7L
Lost water (mash)= 3.6L
Lost by evaporation = 4L
Lost in the kettle = 2L
To go in the fermentor = 22.1L
Fermentation at 13°C during 2weeks min.

Instructions:
Target mash temperature = 65 C
Target mash pH = 5.5
Boil for 90 min. Add Lactose at 10 min. before the end of the boil
Ferment with Vermont Ale Yeast (we use a unique house-strain)
Fermentation Temperature = 19 C, increase temp to 22 C at 10 Plato (1.040 sg)
Add fruit to fermentation vessel at or around 8-12 Plato (1.032 – 1.048 sg)
Dry hop 3 days post terminal extract (~4.0 P)
Cool to near freezing 4 days after dry hop
Condition for 1+ weeks |
