Notes: *** Planning for 6 gallons post boil (1/2 gallon loss to Trub), then post fermentation I'm planning on splitting the 6 gallons ( 3 gallons each) into two different secondary's, one will have the secondary additions, (those numbers are listed above for 3 gallon addition)...the other will have concentrated flavorings from a flavoring company.
1. Sour wort with Lacto Brevis for 3-5 days to get PH below 3.4, I think anything between 3.2 - 3.4 has soured well for me with this lacto. Sometimes it takes a little while to get going.
2. Once fermentation is complete, rack beer off the dead yeast & into secondary on top of adjuncts for 3 - 6 days. Taste each day & add more adjuncts as needed. |

Notes: Mash at 153°F (67°C) for 60 minutes, then rest until conversion is complete. Boil for 120 minutes. Pitch the yeast and ferment at 64°F (18°C) to start, allowing the temperature to rise to 67°F (19°C) near the end of fermentation to ensure full attenuation.
After fermentation is complete, in separate mesh bags, add to the fermentor 8 oz (227 g) of roasted cacao nibs and one vanilla bean split lengthwise. Leave the cacao nibs in contact with the beer for 1–3 days, tasting daily and removing cacao nibs when desired flavor profile is achieved. Condition for 2–3 weeks while aging with the vanilla bean, before packaging at 2.3 volumes. |

Notes: After Fermentation, add an additional 5.5 gallons of (boiled for 10 mins) filtered water to dilute the beer down to 4% ABV. Doing this will remove the yeast flavor, bringing it in line with the style. It's also important to properly lager and use the finings listed to clear up the beer.

Adjusted hop schedule to:
0.5 oz 60 minutes
0.5 oz 30 minutes
0.5 oz 15 minutes
0.5 oz 0 minutes
1.0 oz dry hop
Set boil size to 3 gallons. For a 3 gallon boil, use 2 lb LME wheat for boil, in addition to steeping grains, to achieve 35 IBU for Gumbalhead. Add remaining LME after boil to keep SRM in 3-6 range. |
