| Notes: Mash at 150F for 60 min. Add First Wort Hops when entire boil volume approaches 170F. 90 minute boil. 0 Minute hopstand hops get added at flameout and stand for 45 minutes. 0 min Aroma hops get added at 160F during chilling. Pitch and ferment 68F-72F (basically room temp). Primary for a total of 14 days so that everything clears up nicely, cold crash for 2 days at or below 40F, then rack to secondary and bring back to ferm temps. Add first dry hop, 2 days later add second dry hop and filter and bottle at the end of day 4. Bottle and condition for 21 days at 70F. |

Pitch the starter at 70f. Wait for fermentation to begin then start ramping the temperature upwards to 90f. Hold here for the remainder of fermentation.
If bulk aging bring the temp back down to ambient slowly. Allow to age in a dark room.

This recipe is something I've been working on for awhile now, tweaking a little here a little there. I feel as though I have it pretty well to the point that I can call it finished. It has been very very well received by all those who have either brewed it or tried it. It is a gold medal winning recipe by LoloMT7 and a silver medal by myself. His scoring a perfect 50-50 at the Montana Mashup Homebrew Competition. Mine scoring a 46-50 at the Maine Homebrewers Competition placing behind my barrel aged version of a similar recipe.

Notes: Steep the grains in the mid 150s for 45-60 minutes.
It is assuming a 5 gallon batch,
3 gallon - 60 minute boil, and adding the extract at the beginning.
If you can do a full boil you probably wouldn't need the extra 1oz.Citra at 60 minutes.

As far as First Wort Hop / Steeping hops.... I would add them with around 10 min left in steep (before rinse), and put them in a different bag than the grain. Then you can leave them in for the whole boil.

Toast rolled oats in 325ºF/163ºC oven for approximately 1 hour. Some notes in thread about leaving them in a bag to cool down overnight, but some that skipped the cooling step in main forum thread.

After starting fermentation, make up spice and raisin tincture. Split and scrap the vanilla bean and put all of it into the bourbon. Let soak for at least a week. Filter with coffee filter and pour into bottling bucket or keg.
Add tincture to taste. Some report that 4-5 oz is enough, others say not enough.
Added raisins to the tincture for more of a raisin kick. Cut raisins coarsely and add to bourbon with spices.
Substituted the inverted turbinado sugar for Belgian Candi Syrup D45 according to a comment that inverting didn't make a difference and someone else saying they made this sub. I think the point here is "brown" sugar that isn't molasses.
Yeast recommended WLP002, but WY1968, A09 Pub, Safale S-04, and Danstar Nottingham are all decent subs.
