 400 g de farine de blé blanche ont été utilisées (farine industielle)
 
 12 litres d'eau Labrador a été utilisée en tout dont 8  pour la maîche
 
 1-2 g d'amylase ajoutée à la maîche pendant l'infusion
 
 La demi des sels ont été ajoutés à la mâiche, le reste ajouté à l'eau résiduelle
 
 L'orge rôtie (10 g) a été infusée via un petit tamis, pendant 5 minutes au tout tout début de l'ébullition pour augmenter la couleur de la robe et donner du «corps» au moût (ce qui fonctionna très bien).
 
 20 litres de moût mis à fermenter (le goût est bon MAIS pas superbement houblonné.
 
 La D initiale mesurée me donne 1,040 donc  5,4 % ABV
 
 De la teinture-mère de houblon vert maison  (Chinook) a été ajouté
 au moût le ou vers le 3ième jour (2 c. à soupe au moins)
 Également, de la teinture-mère a été ajouté en tourie au début de la seconde fermentation puis du romarin par après) -2 jours après.
 
 Transfert en tourie, le 21 sept.
 
 Le 23 sept. j'ajoute un bout de branche de romarin frais de 1 1/2 pouce dans le moût car je veux lui donner une touche moins fruité du fait de la présence marqué du Mozaïc.
 
 125 g de dextrose ont servis pour la carbonation
 
 28 sept 2017: EMBOUTEILLAGE: 14 litres d'excellente bière bien houblonnée et à l'arrière goût résineux (Chinook plus Romarin)

 Preparation:
 
 1. Prep: (Add pure water to brew kettle - bring to the boil.
 2. Peel Ginger + grate it (course)
 3. Chop Dates finely ( once pitted)
 4. Prep the Spices & lemon Rind.
 5. Add boiling water (1000m) into a clean container with the Rooibos tea leaves (approx 80g).

 Mash step #1: (Ginger + Dates)
 
 a) Add Ginger & Dates in a grain bag (without Malt) to boiling water in the brew kettle. Boil for 5min only. At Flame-off, agitate ginger & dates.
 b) Leave ginger & dates in the brew kettle until wort cooled to at least 80'C.
 c) Add Spices & lemon rind, to grain-bag. Mash for 10min.
 
 Mash step #2: (The Malt)
 
 d) With wort at around 70'C, add Malt to additional grain bag.
 e) Mash for 60min.
 
 f) When done, remove Grain Bags & Sparge malt with 1.5L of 70'C water.
 
 g) Bring kettle is back to simmer:
 Add Brown Sugar & dissolve completely
 Boil wort for 15min total.
 Add Rooibos Tea at last 5 min of boil.
 
 At this pint you should have roughly 12L of wort...

 - Cool wort to at least 35'C.
 - Prep Yeast in 250ml boiled & then cooled water, in sterilized container.
 - Hydrate as per the normal procedure.
 
 - Add all cooled wort to fermenter (sterilised).
 
 [my gravity reading] : 1050
 
 - Agitate/shake for 60-sec to aerate wort.
 - Add hydrated yeast.
 -Agitate/shake for at least 30-sec to aerate fermenter.
 
 Add one-way-valve as per normal procedure, (sterilized)
 Place in area approx 18-22'c
 
 [I fermented at 16-18 degrees for 1 week]
 [I decanted thereafter into secondary fermenter, and
 let it sit for 24-hours at approx 10-12'C, before bottling with brewing sugar as primer.]

                | Notes: This is the finest IPA I have brewed to date. It is everything an IPA should be and more. It costs a little more, but it is worth it. Tastes better than some of the major craft beers... 
 This is a great beer if you like something between an IPA or double IPA style. It is fresh, citrusy, crisp and fully hopped.
 
 This recipe did not taste too strong either, but at 7% it is definitely an IPA but perhaps just shy of some double IPAs.
 
 Give this recipe a try... well worth it.

 Racked to secondary after 9 days reading 1.010 so looking good.
 
 Second time brewing came OG .051-52 in Primary now racked to secondary after 9 days  finish at .010 Dry hopped another .5 of Simcoe.
 
 10/6/15 - OG .047 a little low added water to 5 gal before testing hydrometer thats fine I want it under 5% so we'll see. Pitched at 61.
 
 10/16 - FG .009 for 5%
