1. Steep grains/wheat in 2 gallons of water at 150F for 45 minutes. Pour liquor into 4 gallons of water in brew pot, sparge with 1/2 gal of clear water.
2. Bring to boil; add 1st can of LME; return to boil
3. Add Cluster hops; boil 40 minutes
4. Add 2nd can of LME; boil additional 10 minutes
5. Add 1 tbsp irish moss; boil additional 5 minutes
6. Add Liberty hops; boil additional 5 minutes
7. Cool, transfer to primary. OG 1.053@ 60F
8.Pitch dry yeast when at 75F. Stir well.

Notes: made 2L starter at 1.020 for both yeasts, left overnight.
DME added in last 10 minutes, likely higher IBUs than the calculator thinks.
Belgian Saison got the overnight mash.
3724 starter smelled beery.
568 started smelled super fruity and delicious.
sampled 3724 after 2.5 days, SG at 1.022, beer tastes good, creamy, sweet, estery, maybe bubble gum or cotton candy? after 9 days, SG at 1.015, not nearly as bubble gummy as it was, TBH, it's a bit worse. after 3 weeks, gravity at 1.007, tastes good, reminds me of hennepin, smell has a bit of not entirely pleasing fermentation character.
sampled 568 after 5 days, refractometer says 6.2 brix, smells a little sulfury, not very good tasting. after 13 days, refractomter says 6.5. smell still maybe sulfury, tastes very good though, very rich in soft, fruity esters. finished at 1.008, some of the fruitiness is gone (should have served it asap?). |

Notes: Steep the crushed malts in 4.75 L of water at 70°C for 30 minutes.
Remove the grains from the wort.
Add the first hop addition at the beginning of the boil primarily as a foam inhibitor.
Add your malt extracts and Irish moss for the last 10 minutes.
Turn off your burner and remove your pot from your heat source.
Now add Cascade hops, and stir to mix in.
After about 3 to 4 minutes, begin using your wort chiller to drop the temperature of the wort to pitching temperature.
This addition is a bit tricky, but the goal is to have the large amount of hops in your beer for about 5 minutes after the beer has finished boiling, but prior to cooling below around 65°C.
This extracts a small amount of hop bitterness, and a large amount of hop flavour.
When you have cooled your beer to about 26°C, you can strain the beer into your fermenter.
Aerate your beer and pitch your yeast.
Ferment at 20-21°C to help hold the aromatics in the beer.
When fermentation is complete, rack your beer off the trub, and add the remaining “dry hop” addition of 50g of Willamette and allow the beer to absorb the dry hop flavors for about 4 days.
Then bottle or keg as you normally would. |

Make a large starter of WLP099.
boil DME in as little water as possible. Transfer half to a sealed jar and close it sterilized.
Top the rest up to 3.6L and pitch. Aerate periodically.
When fermentation is almost done, combine the rest of the canned wort, aerate periodically.
Let it ferment out completely. Then start adding honey and yeast nutrient, gradually, while aerating and measuring gravity daily.
Stop nutrient addition and aeration when nearing the maximum possible alcohol content. |
