Notes: This is a beer of my creation based around the Woolworths lager extract tin.
1. The grains will be steeped in 5L of water at A tgt of 68°c.
2. They will be sparked with 1L of 80° water before boil(will only boil dependant on mash volume.)
3. The reason for such a large mash size for such small specialty grains is I will add the extra tin and other fermenter balls after the match is done. This will insure that all fermentable‘s are fully combined and dissolved in the water.
3.1. At this point, the wurl flock tablet will be added.
4. While fermenter walls are dissolving, I will steep, the 20 g of East Kent Goldings in approximately 250 mils of boiling water and these will be added to the water when the yeast is pitched.
5. Once all of the fermentable are dissolved in wort I will add top off of 17 L of 10° water. This will leave me with a pitch temperature of 21°C.
6. Once the desired temperature is reached, the east will be pitched along with the nutrient and the east Kent Golding, hop addition.
I’ll be honest, I don’t know how this is going to turn out, but I am pretty excited as this is my first time adding specialty grains. |

Notes: Use Briess traditional dark for DME.
Make a large starter of WLP099.
boil DME in as little water as possible. Transfer half to a sealed jar and close it sterilized.
Top the rest up to 3.6L and pitch. Aerate periodically.
When fermentation is almost done, combine the rest of the canned wort, aerate periodically.
Let it ferment out completely. Then start adding honey and yeast nutrient, gradually, while aerating and measuring gravity daily.
Stop nutrient addition and aeration when nearing the maximum possible alcohol content. |

-Agitate/shake for at least 30-sec to aerate fermenter.
Add one-way-valve as per normal procedure, (sterilized)
Place in area approx 18-22'c

| Notes: Full Bodied, mostly English style ale, with a moderate hop bitterness. Dark red in colour, the heavy maltiness is balanced by the soft bitterness of the Target hops, with a noticeable citrus flavor from the cascade hops on the finish. Quite alcoholic (my actual abv was 6.3%) so it gets the job done. |

Notes: Mashed for 60 min (difficult on the stove to maintain temp) approx 155 deg was my goal. Started with 1 qt water for 1 lb total grain. added quite a bit to cool temp down since the 10 deg rule over ideal temp wasn't getting me down quick enough.
Mash out at 170 deg for 10 min (includes raising temp time). Sparged with 170 deg water and added water to get about 2.75 gal of wort. Brought to boil (about 45 minutes). Added DME just before boil and brought up to boil. Added hops as scheduled. Opted to add Willamette at the last minute to give more complex bitterness. Added the candy with 10 minutes to go. OG was 1.080 (adjusted the final batch size), as expected. Pitched the yeast a little high but was having trouble getting to low-60s (66). COncern with the yeast was that in transport my car got pretty warm and don't know if it will work. NO movement after 30 hours. Bubbled fine and transferred after 9 days. FG was closer to 1.016. Tasted sweet with some complexity. Not hoppy at all. Turned out fantastic. The longer I wait the better it gets. |
