Notes: Hammer this guy with three packets of yeast. Its super light and high gravity. We want no off flavors at all.

Modified recipe. It produced great beer, but I'm adjusting my system from 6.5 lb of grain to 8 lb, and the efficiency needed to be raised from 60% to 72%. I also want to tone down the alcohol a bit, because I want to drink too much of this beer and I'm just getting drunk.
Was OG 1.066, FG 1.011 (7.24%), IBU 76.26, SRM 6.78
The C20 was 12%, I should keep this. I think just below 7% would be good. It needs a strong backbone to carry the hops. 2 packets of yeast should be fine. I'm also trying to trim costs.
I noticed I was a little low on the bittering hops so I bumped up both from 1 oz to 1.2 oz. now IBU 91 |

This version has a different hop list; the actual hops used fit the author's intended type but not amount (I used less). Also, this is a Partial mash instead of extract. Basically, I used half the DME and calculated the gravity points from the missing DME and made it up with an appropriately calculated amount of pale malt. The original recipe mashed a pound of pale malt. The gravity points from this step were also accounted for. I also included a pound of Munich in the mashing to make up for a lower amount of amber DME (which I understand contains Munich). In the end I'm not sure why my predicted/actual gravity came out so much higher. The original recipe used the following for fermentables (in addition to the crystal and molasses):
8lbs Amber LME
1lb briess two row pale
Author's measured extract OG was 1043. Mine measured as Brewer's Friend predicted: 1054.
FG: 1.010
Pitched yeast am of 5/21 at 72F
Transfered to keg June 10
6/14--good carb. nice amount of roasted flavor/aroma. Cinamon and molases are extremely subtle. |

Notes: Initial strike water temperature at 175F. Mash in for 60 minutes. Vorlauf until clear liquid. Drain into brew pot. Batch sparge with 190 F water to bring temperature close to 170. Mix grains and then vorlauf after 10 minutes. Drain into brewpot, add rinse water over grains to boil volume and continue as normal.
Add honey at 15 min.

Notes: SG was way off at the end. Must have gotten much better efficiency than I expected. Split batch. 5 gallons with and SG of 1.060. Maybe 1.5-2 gallons with an SG of 1.042. Unfortunately lots of headroom in the latter one.
Ended up adding 3/4 of a package of 05 yeast to the two batches to be sure pitch was sufficient. |
