8 Jun 2017 | Beer too thin with C120 reduction, at least early on. With a month or so of age in the bottle, this became quite good. No strong raisin flavor at all.
Bump up C120 to 14 oz.

| Notes: Added yeast while wart was still a bit on the warm side, around 30*C. Volumes a little uncertain for water. Seemed a little on the weak side, so put the hops and about 1 kilo of grain into the water to add to the fermenter to bring up the volume. So may end up with a slightly higher IBU than planned. Wart temperature steady at 80*C for hopping though, which may bring down the IBU. As time consuming and annoying the sparge/mash process was with 6 Kg of grain (completely filled the 18L fermenter), I may consider substituting some of the grain for an extract next time around. |

Notes: -In a 20 quart or larger stainless stockpot, bring 2 gallons of water to 160*F and turn off heat.
-Put the crushed grains in the grain bag. Soak the grains in the hot water and maintain approx. 155*F for 45 minutes
- After soaking the grains, dunk the grain bag in and out of the water then completely lift the grain bag out.
- Place a strainer over the stockpot and put the grain bag into the strainer. Pour 1.25 quarts of 170*F water evenly over the grain.
- Discard the grains, add 1 gallon of water and return the heat to boiling.
- Turn off the heat and move the stockpot to a cool burner. Add the Malt extract and stir constantly to dissolve the malt extract.
- Return heat to the mixture once dissolved, stirring occasionally.
- Once the boil is under control, adjust the heat to a good rolling boil.
- Set timer for 60 minutes, add 1 oz Apollo.
- For last 15 minutes, add 1/2 oz Cluster
- For last 10 minutes, add 1/2 oz Cluster, 1/2 oz Cracked Coriander, add 1/2 oz Bitter Orange Peel
- For last 5 minutes, add 1/2 oz Centennial, 1/2 oz Cascade.
- Remove from heat and add wort chiller to cool to 80*F as quickly as possible.
- Pour the cooled wort into sanitized primary fermenter and add cool water to make 5.25 gallons. Stir well.

| Notes: This is a great grain bill for an Irish Red ale also. This yeast had a really cool kreausen during the primary fermentation. It looked like brain tissue. I never have seen anything like it. |

Notes: Clone of McEwan's Scottish Ale - ABV target ~ 8% ABV
Make yeast starter at least 12 hours prior to brewing.
Brewing OG = 1.090
Ferment 7 days at 72º
Rack to secondary and add 1 oz. East Kent Goldings SG = 1.028
Ferment 35 more days at 72º
Bottle SG = 1.022 ABV = 8.8%
Make INVERT SUGAR 12 hours prior to brewing - recipe:
½ lb. pure cane sugar ("Turbinado" Sugar is best)
1/8 tsp citric acid
3/4 cup water
Dissolve sugar, add citric acid, and simmer at low heat for 20 minutes to 2 hours.
Steep/Mash grains for 30 min @ 156º Sparge @ 170º.
Add 6 lbs amber DME at boil.
Add 1 oz Kent Goldings at boil.
Add 3.3 lbs dark LME @ 30 minutes.
Add 8 oz. Invert sugar at 15 min.
Add Irish Moss at 15 min.
Add 1 oz. Styrian Goldings at 5 min.
Appearance: A blackish brown body with a slight reddish hue when viewed in front of a light and a pleasant dense tan head
Aroma: Caramelly malt with hints of cherry and spice playing softly in the background.
Taste: Big, sweet malt flavors immediately fill the mouth with dark fruit and vanilla behind it, and a slight tang coming through on the aftertaste.
Mouthfeel: Smooth, thick and almost oily (but not in a bad way!) with small tingling bubbles. You can feel a bit of heat from the alcohol.
Drinkability: This is a sipper for sure.

Modified recipe. It produced great beer, but I'm adjusting my system from 6.5 lb of grain to 8 lb, and the efficiency needed to be raised from 60% to 72%. I also want to tone down the alcohol a bit, because I want to drink too much of this beer and I'm just getting drunk.
Was OG 1.066, FG 1.011 (7.24%), IBU 76.26, SRM 6.78
The C20 was 12%, I should keep this. I think just below 7% would be good. It needs a strong backbone to carry the hops. 2 packets of yeast should be fine. I'm also trying to trim costs.
I noticed I was a little low on the bittering hops so I bumped up both from 1 oz to 1.2 oz. now IBU 91 |
