Notes: Boil the wort with the extracts. Aim for 1.075 gravity when starting boil, 1.082 end of boil.
Yeast is K1-V1116 wine yeast (also ferments maltotriose so can ferment beer with workable attenuation).
Use 2 yeast packets. During the first 2-3 days, gradually add sweet chocolate mead to the fermenter with some yeast nutrient (starting with DAP and progressing to Wyeast blend).
Aerate 1-2 times a day until fermentation starts to subside.
Keep rousing yeast without aeration.
Ferment cold.
Give the yeast some serious time to settle after fermentation, then bottle with priming sugar. |

In the second episode of the series iʹm tackling the D&D Baldurʹs Gate Red Ale, a nice and easy one to recreate, as the modern style is in the name already! The Irish Red Ale!

All-Grain Directions:
Mash the crushed grains in about 1.5 gallons of clean, chlorine-free water for two hours. Lauter and sparge, collecting about 6.5 gallons of wort in the brew kettle. Bring to a boil and boil for 90 minutes, adding hops according to schedule. Mix in the brown sugar at the end of the boil. Chill wort to fermentation temperature and ferment at 70˚F until complete. Bottle or keg and enjoy!
Partial-Mash Directions:
Replace the English pale malt with 3.1 lbs. light dry malt extract. Mash the crushed six-row malt in 2 qts. of water, then sparge. Add enough water to make a 3-gallon boil and mix in the malt extract. Bring to a boil. Increase the 90-minute hop addition to 3.5 oz. and the 20-minute hop addition to 1.5 oz. Continue with the recipe above.
Incidentally, Whitbread yeast is derived from that brewery. Safale S-04 is the dry yeast version. |

Notes: 1. Prepare 6 L of water and heat to 67 C. Once ready add your steeping grains and mash for 1 hour (maintaining 65-67 C) Do this by placing a lid on the pot, at the end of the hour raise the temperature to 75 C and hold for 10 minutes. Then strain the liquid through a sieve into pot and boil for 30 minutes.
2. In a separate pot add 1 litre of water and bring to the boil (hold the boil for 30 minutes.
3. Add 25g of African Queen Hops to the water for the full 30 minute boil.
4. Add 20 g of the Mosaic hop after 20 minutes of boiling (10 minutes in the boil).
5. Strain the hop water though a sieve into the wort you produced from steeping the grains.
6. Add the contents of the Black Rock Pale Ale Can to your sanitised fermenter.
7. Add the wort produced from the steeped grains and the hop water to the fermenter.
8. Mix everything together well and then top up the fermenter with cold water to 20L, take a hydrometer reading at this point and record the figure for later.
10. Check the temperature is below 25 C, if so you can add the Verdant IPA yeast to the mixture.
11. Place the lid of the fermenter on firmly and insert the airlock using sanitiser or sterile water or vodka in the airlock.
12. On day 4 of fermentation add your remaining Mosaic and Arfican Queen hops to a sanitised hop sock and drop it into the fermenter.
13. After 7 days from the start of fermentation, check again with the hydrometer to establish if primary fermentation is complete, if you have the same reading for two days in a row primary fermentation should be complete. If so you can go ahead and bottle the batch.
14. Bottle as normal using your priming method of choice.
