Notes: Dry Hop first batch at 4 days into fermentation. Gravity reading around 1.035-38. Re rack into another secondary after 8 days and finish fermentation for 5 more days. Priming sugar and bottle after 5 day dry hop is finished. 3 weeks to open.
Add 4g. 1 tsp Calcium Sulfate and 9g Calcium Chloride to post mash and sparge.
On mash, after 45 minutes rinse grains with 1 gallon 170' water.
Add malt. Bring to boil. 60 min. |

Notes: Bring 6lbs of frozen strawberries with pectin added to a boil.
Pectin is added to prevent chill haze.
Shutdown boil after 1 minute.
Cool pot rapidly to room temperature..
Add equal volume of water and honey.
Cooked honey at 160 Degrees for 30 Minutes. Cool pot rapidly.
combine strawberries, homogenized honey, and other ingredients. Sprinkled yeast on top of fermentables.
Add Fermaid K after 3 days to boost fermentation.
Rack to secondary fermenter after 5 Days.
Continue with fermentation until it ceases.
Verify final gravity with hygrometer.
Opti-White added for mouthfeel and protein stability.
FT Blanc Soft is a white wine tannin. Protects against oxidation.
Use both of these in meads and ciders.

Notes: Bålfyrt med ved og kull.
Meska inn fra 62.lå fint på 65-66 en god stund,endte på 69 siste 15min.
Kokes 120 min +.SAKTE oppkok dvs 2-3 timer for å nå kokestart. Humle fordeles jevnt og slumpvis over hele perioden.Tilsett litt potetvann.
La meskeposen ligge over på rist med kar over seg under hele kokeperioden unntatt siste 15min.
Meskevann tilsettes lite men jevnt over posen under hele kokinga.
Plasseres rett ned i kjønn så vannet nesten er på linje med ølnivået.
La så den tomme gjærlåsen trekke inn frisk morgenbris pga vakum så villgjæra får feste. Når den er kjølig kan man fylle gjærlåsen med kokt vann. |

| Notes: Have the grains in a brew bag along with 2 gallons treated water. Bring to a near boil and shut off the heat. Let the grains steep for about 30 minutes. Drain to brew kettle. Rinse off the grains with 2 gallons of 180 degree water. Fill brew kettle to 4 gallon line and bring to a boil. Add extract. When it starts to boil again add the bittering hops. Boil for 50 minutes and add the finish hops, nutrient and whirlflock. Boil 10 more minutes. Cool to fermenter. Sparge hops with cold water to near the 5 gallon mark and pitch the yeast. |
