Notes: Heat 5 gallons (19 liters) of water until steaming, then turn off the heat, add the sugars, and stir until dissolved. Boil for 10 minutes, then add 2 g yeast nutrient. Chill to 68°F (20°C), aerate, and pitch the yeast. After 24 hours, add 2 g more of yeast nutrient, and the same the following day. When fermentation is complete, add flavorings and adjust as desired, then package and carbonate.
BREWER’S NOTES
This is where the fun begins. Your clean hard seltzer is a blank canvas for a variety of flavorings. Here are a few options:
Fruit: Add 2–3 lb (1–1.5 kg) of low-pectin, crushed or pureed fresh fruit (such as raspberry or pineapple) for a bright and natural fruit character. To be on the safe side, consider adding ¼ tsp (1.2 ml) of pectic enzyme to fight haze that might be caused by fruit pectins. Wouldn’t want to cloud up that crystal-clear seltzer (though it will taste great either way).
Coffee: Cold-steep 8 oz (227 g) of your favorite artisanal coffee and add to taste—if you think hard seltzer is cool, wait till you show up to a party with hard coffee.
More Flavors: Get your hands on your favorite liquid flavor extract and add to taste. This is probably the simplest option, and you get a huge range of flavors from which to choose: PB&J, vanilla and allspice, butter almond—there’s no end to the possible combinations. |

Gerjun byrjaði í 32 gráðum, og gerið lifnaði við í starternum eftir að hafa frosið. Þannig að gerjunin verður mögulega eitthvað off.
Hækkuðum meskingar hitastig sem flakkaði á milli 67-73. Mashout hjálpaði mikið til, gott flæði í sparge og mjög litið trub í pottinum þegar við transferuðum yfir í fermzilla. Vorum ekki með ricehulls!
Á 2.degi gerjunar var þurrhumlað, og trub tekið burt í gegnum söfnunarbauk á fermzilla. Sama skal gert á 6.degi. Þegar gerjun er við það að klárast, þá skal líka taka vatnslásinn af og setja ball-lock tengið á og skella ca 8PSI kolsýru í tankinn og setja spundling valve á líka með 10PSI (kanna nánar? amk alls ekki meira en 14!). Með þessu getum við nýtt tímann á loka metrunum til að kolsýra bjórinn! Þegar þurrhumlun er lokið (sama dag) skal cold crasha hann í ísskápnum í amk 3 daga og færa hann þá yfir í purgaðan kút með spundling valve á með örlítið lægra PSI en gerjunarílátið. Muna að mæla FG áður en cold crash er sett í gang (ef gerjun er ekki búinn skal bíða eftir því áður en coldcrash er sett í gang. (gott tips er að purga línuna sem er notuð til að færa bjórinn milli fermzilla og kútsins. Og að purga kútinn .. enn betra ef hann er með starsan í og ýta því út með kolsýru áður en maður transferar).
FG var 1.014 eftir 6 daga, setti ca 8PSI á þá eftir þurrhumlun og coldcrashaði bjórinn. Notaði spundling valve á fermzilla, stillt á 9PSI. Kútun 3 dögum eftir það.
Comment frá síðasta NEIPA:
"Þar sem gerjunin fór lengra en við vildum, væri fínt að meskja á hærra hitastigi næst (var gert á 67° en kanski betra í ca. 69°?). Einnig hafði Halldór orð á því að breyta humlaschedule, fá meiri humla í biotransformation t.d." (var 180gr í biotransformation).
