Notes: "also known as the hadopelagic zone and trench zone, is the delineation for the deepest trenches in the ocean. This zone is found from a depth of around 6,000 metres (20,000 ft) to the bottom of the ocean. The hadal zone has low population and low diversity of marine life."
Mash at 154F for 60 min.
boil for 90 minutes.
kill the flame, add post boil hops and let stand for 60 minutes. chill quickly and pitch a healthy amount of yeast; aerate well at pitching and once again as fermentation begins (bubbles in blow off tube).
Ferment at 68F for 14-17 days. cold crash to knock everything down, NO TRANSFER, raise back to 68F and dry hop. 3 day dry hop. bottle and let sit for 21 days.

Notes: Equipment Evolution
Blichmann 50l is the mash tun, with the new original false bottom, because the malt bill is too big for the Robobrew. We can also do a step mash with Blichmann 50l.
Robobrew is our boil kettle because his capacity is 30 litres and that is our wort volume going into the kettle AND he fits perfectly under the Blichmann 50l for a gravity transfer.
Mash water just clears the false bottom at 19 litres, so we are adjusting the mash water to 20 + 3 x #kg in mash = 44 litres.
We will adjust sparge water accordingly to get 30 litres for the boil.
Left over last runnings can be used for a low alcohol beer second beer with another yeast (Session IPA??).
I will be surprised if my final gravity is 1.015 since I have very high attenuation in most of my beers and I really want a dry finish to follow the Trappist style exactly. So, I am OK with with the ABV estimate of less than 9% because I will probably hit that in the final product.

Notes: Infusion mash at 155 (68C) for 60 minutes. Add Hops, Chocolate and Coffee as directed. Ferment for 14 days at 65 (18C). Soak .25 oz (7 g) of Toasted French Oak chips in 1 cup of Kentucky bourbon for 2 days. Soak ground Kona coffee in 1 cup (237 ml) boiled, cooled water overnight, covered, in the refrigerator. Strain out grounds and add cold-brewed coffee and bourbon with wood chips to sanitized secondary fermenter. Rack fermented stout onto secondary and condition at 50-60 for 2 to 6 months.
Note: Something is off - I'm not getting the predicted bitterness. It should come in at 73 IBUs.

Before bottling the taste was right where you would want it for a blonde. I am just hoping both the malt and bitterness mellow a little bit and just flow together. Im pretty excited. Notes: Rapadura: An unprocessed Cain sugar with an incredible caramel taste and smell, some of which should make it to the final product (used in lieu of buckwheat honey to soften the bitter edge of the sorghum), and has a dark brown color.
Dry hop with 1oz of Cascade after about 5/6 days in Primary (or once activity has slowed stopped.)
Cold crash and fine with Gelatine after gravity settles.
This beer will be primed at the high end of the American Ale style if using the amount of Rapadura or cane or table sugar shown in this recipe. |

Notes: Batch split between 2 fermenters. 1 batch with S-04 and the other with US-05.
Original recipe called for 2 lbs. carapils, but I only had 1.75 lbs on hand. Substituted .5 lb of flaked oats for head retention and mouthfeel. Called for 1.5 lbs of pale chocolate, but I only had 1 lb on hand. Substituted 12 oz chocolate malt, which pushes SRM to 24 rather than the original 18. I prefer brown ales to be a little more full flavored. |
