After a very good brew day I had a lot of trouble getting temp from 16°C to the 17/18 range I was hoping. Dropped to 15°C overnight and took 2.5 days to begin fermentation.
Then I overshot temp up to 21/22°C following that.
Tasted on 29-5-18 and tasted good with no off flavours or infection.
1.020 31-5-18 - Temp around 21°C, tasting good with light alcohol on nose. Moderate fruity esters, hints of banana and dark fruits. Plenty of malt character and yeast character.
1.008 3-6-18 Temp around 22°C, tasting good still. Good balance between malt, esters and bitterness.

9/8/18 Drinking quite well. Not as happy as I would like but still a very good beer. Too dark for the style. Next time I’ll use only 60L Belgian Candi syrup. Less syrup overall. I will also improve yeast pitch rate and temp control.

| Notes: One thing to note is that you need to get rid of as much fat as possible. You can do this by buying lean bacon and trimming fat off before cooking. In addition, use paper towels to soak up the grease. Do whatever you can to get rid of that fat. Excess fat (even yummy bacon fat) can reduce the ability to have a head on your beer. |

| Notes: Pre-warm paper bag of grains in 2oo°F oven for 20 minutes, pre-warm mash tun with hot water. Infusion mash from 12:00–13:00 @ 156°F. Vorlauf 20 minutes until clear. Fly sparge from 13:25 with 170°F strike water (142°F in mash tun). Kettle boil start @ 14:05. Follow continuous hop addition formula. Chill brew kettle from 15:08 (212°F) to 15:30 (75°F). | Notes: Mashed in Blue Cooler, sparged as asked. Even though it was a 5 gallon recipe batch, when it was all done with the boil, and I topped just over 4 gallons my OG was 1.048 and recomennded was 1.049 so I left it. Added 2.9 oz of dextrose in 1 cup of water to final beer. Had a minor spill that cost me about a beer to a beer and a half. Ended up with 37 bottles using black caps. CAN'T WAIT for this brew! |

no fresh cranberries in stores, used 20 oz dried cranberries (cranberries, sugar, sunflower oil) rinsed for 30 seconds then re-hydrated for 3 days. added re-hydrated cranberries, extra water from re-hydration and 12 oz of frozen cranberries.

Add relish and Pectic Enzyme to secondary.
Rack beer onto relish.
Relish floats leave plenty of headroom. |
