pre brew notes : removing the DME and increasing efficiency, adding some more 2row and wheat to boost gravity. everything else should be hunky dory.
post brew notes : this one came out sweeter and thicker and fruiter than i remember. the fruit sweetness covers up the dry hops. i think it could use a boost in dry hops. maybe some more bittering too but also maybe not since it kinda goes against the concept

Efficiency came out really low so I had to add DME a couple days into fermentation. I intended to add more but it was all I had on hand at the time.
I put all the dry hops and the coconut all in one giant muslin bag, it was pretty stuffed. Probably did not get max extraction. Considered racking to secondary to free up some head space but it was still actively fermenting I didnt want to mess with it too much.
Side note : because of other ongoing batches, this batch did not have an airtight seal on the fermentation bucket. I just used my brew pot lid.

bumping warrior from .5 to .75 - RR was not bitter at all but all sweet and smooth. When dry hop wears pff its missing some bitter balance. Should prolly do 1 whole oz. But non ipa guests might like it more if less bitter.
unclear on how much coconut. this guy used 0.5 lb for 1-3 days in dry hop (but he also used another 1lb during boil and another 0.5 lb in keg). seems like not a lot but he insists not to overdo it. he says it imparts flavor fast.

some other recipes im seeing are using a pound or more total. a lot of people have been adding some to boil, which as of this writing it is too late to consider. cant decide if i want to add 1/2 or a whole pound...
Went with 8oz flaked unsweetend coconut for 3 days and it is really coconutty! But not too much.

original notes from strawberry milkshake research :
did not finish my recipe before getting to the brewstore so its a little improvised but i think it will work.
one worry is that the original recipe was only 1073 OG. when i beefed up the malt bill i did not add any additional bittering hops so it will be pretty low IBU and Bu/GU but we'll see...
strawberry is strawberry puree. or maybe frozen and thawed fruit. add the fruit after high krausen. add dry hops after that, approx 4 days before keggings.

some say to add wheat flour too but im not so worried about the appearance, it should be hazy enough with the oats wheat and manchester yeast...

Notes: Pumpkin was baked at 350 for 60 mins, cooled, and then steeped with specialty grains between 150-155 for 60 minutes.
Sparged with 1 gallon of 170 water.
OG was 1.07 and FG 1.012. Not sure if steeping efficiency > 35% and/or pumpkin added some PPG.
Beer was good but a little too spicey. Would recommend cutting down on Nutmeg and Allspice. Also, steep grains for no more than 30 minutes. |

Notes: Two packets of Lalvin D47 Wine Yeast (only ferments to ~ 14%)
Yeast Starter directions from "Compleat Meadmaker" - 6.5 cups of water, tablespoon of Light DME, 1/2 cup honey, 1/4 tsp Nutrient, 1/4 tsp Energizer. Bring water, nutrient, energizer, & malt extract to a boil for 15 minutes, remove from heat, add honey, cover with foil. I'll let this sit on my stir plate for about 42 hours before pitching.
Warm a couple gallons of water to ~140 F or so to mix in the clover honey which was purchased at Costco. Use chilled water to bring down to pitching temp & volume up to ~5 gallons (I went up to about 5.75 gallons). OG for me was 1.12-1.13.
Then follow nutrient additions with 1/4 tsp energizer and 1/2 tsp nutrient at 24 hours, then again at 48 hours, then again after 30% of sugar has been depleted. Two weeks of primary before racking to secondary. Warm the organic "strawberry spread" from Costco in some ~140-150 degree water just to be safe, then rest until room temp, then add in to secondary for two more weeks before racking a 3rd time. |

Notes: Steep grain in 3G water at 150 degrees for 30 mins (remove bag), add 2.0 G of water bring to boil add 1/3 tub of
Pale Ale malt extract LME and 1/3 package Pilsner DME. Start the 60 min boil after this, @60 min add 1oz Citra,
@ 30 mins add 1oz Simcoe, (also add 1 teaspoon of Irish moss at 30 mins) @15 min add 1oz Simcoe, @10 min
add 2oz Simcoe , @ 5 min add 1oz Citra , @flame out add the rest of the LME and DME. Make sure to add the
remaining sugars at flame out as to not scorch them. Add 2oz Citra during the whirlpool process at 130 degrees
F. Cool wort in sink of cold/iced water until it is under 68 degrees. Transfer to primary fermenter and pitch the
yeast. Add water to bring to volume or adjust original gravity. Ferment in Primary for about 5-7 days.
Secondary: Peel, dice and boil 2.0 lbs of blood orange slices at 150 F for 15 min. Cool and add to secondary along with 1oz
Simcoe.
Keep in Secondary for 5-7 days then cold crash, move to bottling bucket, add priming sugar, stir often and bottle or keg. |
