♦ SESSION NOTES: This one always comes out really good.
♦ STANDARD BREWING NOTES:
♫Create 8 gallons sparge water. Bring to 154° strike temperature. Prime pump. Pump water through hose. Add tablespoon 5.2 pH balancer
♫Add 2 drops Fermcap before adding grain.
♫Add grain – Sparge at 154° for 90 minutes (Minimum 60) (One gallon loss during sparge process) Water burn rate: 1-1/2 gallon per hour.
♫Boil clean water for end of boil session adjustment. Adjust to 5.5 water line.
•Dark beers – Add x tablespoon Calcium Carbonate
•IPA beers – Add 5 tablespoon Gypsum for IPA
WAKE UP!!!!!!
15 minutes – Add immersion chiller
15 minutes - Add Whirlfloc
10 minutes – Add 1 teaspoon Yeast Nutrient last
♦ Check to see if fermentation tank nozzle is pointed upwards

Notes: Can use altbier yeast (WLP 036) also, but Kölsch (Wyeast 2565 or WLP029) is more attenuative (or also a Belgian Abbey strain, or WLP 810 SF Lager). Could also add some oak cubes for a wood-aged version. Lager for 1-2 months.
No subcategory for this historical style, so I just entered under Düsseldorf Altbier, since this is a similar (but bigger and more complex - smoke and maybe slight sour) beer from Düsseldorf.

Notes: This is supposed to be a somewhat strong, ultra-creamy NEIPA with light bitterness (although more than the 0 IBUs might suggest...) and a fruity, floral flavor and aroma. This beer is inspired by the state of Maine and everything that is great about the Portland scene. I love you Lone Pine, Bunker, Foundation, Peak Organic, Liquid Riot, Mast Landing, Rising Tide, and even Bissell (though I don't like to admit it). I fucking love you all.
Using the no sparge method mostly because my kitchen setup makes a sparge difficult, not because I think there is something to be gained from not sparging. In fact, I probably would sparge this if I could. If you're looking to sparge, decrease the grain bill by a quarter - i.e. multiply all of the grain ingredients by 0.75 to get to your grain bill.
Likewise, the only reason why I'm brewing a small batch is because I don't have much space. If I had more space, I'd brew larger batches. |

Notes: This is a variation on the Mt. Choco with influences from one of the great Midwest stouts: Founder's Breakfast Stout. Cacao nibs add more chocolatey flavor without overdoing it on the malt bill. This should make this beer inherently more drinkable and help it age gracefully. No lactose. No 12oz Chocolate. |
