| Notes: Split vanilla beans and soak in Makers Mark Whiskey for 1-2 weeks. Pour whiskey in during bottling/kegging. Age in bourbon barrel to taste. Pitch 2 packets of yeast at first and then 2 more 24 hours later. |

Notes: Mash at 154F for 1 hour. For more flavor, add the whole ounce of hops to the kettle as you sparge the mash, so the hops soak the time it takes to come up to a boil and the whole boil of 60min, this is the first wort hop. Otherwise boil for 5 mins, add hops and boil for another 60.
Don't cheat on aeration.
Pitch and set the fermentation at 58F for 7 days, raise to 65F for another week and then move to a sealed keg and leave on basement floor ideally for 2-3 weeks at 48F.
After that chill and check on carbonation level. |

Notes: First class Brewing Project done with Extract recipe created by students on February 17,2018 as part of the Into to Brewing class, in the Brewing Sciences program at Trociare College in Williamsville,NY under direction of Dr. Brian Barrow PhD.
The class developed a recipe on the spot with what a set DME base, and a table full of other steepable specialty grains and hops. After they picked a style directions the class worked together on deciding what grains would give them the desired adjunct characters they were looking for and determined how much to use in a matter of minutes also pairing the hops that would best accent the beer in bittering and aroma. Dr. Barrows then informed them that they were going to split that beer in the end into 2 batches and pitch a different WhiteLabs Yeast in each (WLP001 &WLP530), along with the late addition of Belgian Candy syrup D-180 to the fermentor containing the WLP530 Abbey Yeast. To show how two beers with the same base can be affected with simple additions and simply changing the yeast. This is the first of hopefully many beers this class does together at Trocaire College in the Brewing Sciences Department. |

Aerate with O2 for 20 seconds. Added 1/2 nutrient in one cup water
staggered nutrient every other day to complete additions.

August 21- airlock still showing activity ~ 3 bubbles per minute
Sept 20 SG = 1.022. No airlock activity. Taste is still very sweet. strong alcohol notes. Needs more time. After opening bucket, flooded it with CO2 prior to reclosure
Oct 11. SG = 1.020 transfered ~ 2 g to cabroy containing 3 # raspberry puree
remainder transfered to secondary. Still too sweet.
1/7/17 The raspberry batch SG dropped to 1.010 but still tasted too sweet (other wise good!)
The main batch was about 1.018 and too sweet. (otherwise good) Made a 100 mL slurry of champagne yeast and added ca65 mL to the big batch and 35 mL to the raspberry batch.
2/24/17 tested the raspberry mead: SG = 1.004 Tastes good! Bottle time! CAP label M2
4/1/17 The main batch is stuck at 1.018. Taste is good. Bottled. 13.7% ABV cap label is M1 |

Notes: collect wort as normal
acidify wort to ~4.5 pH
bring wort to boil for a few minutes to sterilize wort.
Cool wort to temp preferred by lactobacillus strain.
add lactobacillus
purge kettle headspace with CO2 at 10 psi for about a minute, close lid quickly, and seal lid to kettle with saran wrap.
Wrap kettle with heating device to keep it at proper temp. place the thermometer on opposite side of heating device.
kettle sour for 2-3 days
check pH every day and purge kettle headspace with CO2 at 10 psi for a few minutes and seal lid to kettle with saran wrap.
When pH reaches 3.4-3.6 it is finished souring.
boil as per recipe and add hops etc.
cool to pitch temp and ferment.
