Notes: This is a high gravity doppelbock, with very low hopping rate appropriate for style. Made only with German Munich, German Pilsener, CaraMunich III 60L and Special B [for dark fruit flavors]).
Need huge starter for this. Using yeast cake in Torpedo keg used to ferment Märzen/Oktoberfest with Saflager S-23.
Mash: 20 min at 128F (protein rest), 60 min at 154F (beta rest), 30 min at 158 (alpha rest), 10 min at 168F (mash out).
Boil: 90 min, with Hallertau Mittelfruh added at 30 and Hallertau Hersbrucker added at 60 minutes. |

This recipe will get you close to the original, but not the same. Too many differences in what they brew in Germany vs what we can get here. (Tettnang grown Hallertauer Mittelfruh - seen that lately - or a fresh pitch of krausen from a fermenting batch of Schonramer Hell - you get the picture.)
Note: I believe 'Tradition' Hops are Hallertau Tradition. (Carried at Yakima Valley Hops)
Pitch at 43 degrees in a sanitized bucket loosely covered with foil and allow the temp to rise to ferment temp at 49. Crash slowly and lager for 6-7 weeks. Take your time with this beer.
Start with RO water.

This Pilsner is perhaps one of the better ones in NZ atm. Maybe that's just our biased opinion - or maybe we know somethings that you don't yet.

INGREDIENTS
4.5kg NZ Pilsner Malt
250g Carahell Malt
100g Acidulated Malt
7g of Pacific Jade Hops
150g of Motueka hops
30g of Taiheke Hops
2 x pkt MJ M84 Bohemian Lager Yeast
METHOD
Mash at 62ºC for 60 minutes with 18.5 L of water
Mash out at 75ºC for 10 mins.
Sparge at 75ºC with 10L of water and boil for 60 mins.
At 60 minutes add 7g of Pacific Jade to the boil
At 20 minutes to go add 10g Motueka
At 10 minutes to go add the 60g of Motueka and 10g of Taiheke
Cool rapidly and transfer to your sanitised fermenter
When the wort is between 18-20ºC add the 2 packets of M84 lager yeast and ferment at 14ºC for 10 days – or until SG is stable for 2 days
After 7-8 days add 80g of Motueka and 20g Taiheke hops to the fermenter (in a hop bag weighed down with sanitised marbles if you don’t want as much hop mess)
Leave dry hops in for 5-7 days
Transfer beer into another fermenter and transfer into a fridge or somewhere cool (1ºC if kegging 10ºC if bottling) for 3-5 days and adding your finings agent

Fermentation temperature was optimal for the first 3 days of fermentation. Then we had a heat wave and day time temps rose to into the 80's F. Used freezer packs and a swap cooler to keep fermenter temperatures 76-78 F.
Racked to secondary on day 7 and bottled on day 35 (4 weeks in secondary).
This is a malty, easy drinking game day ale; just enough hops to produce a slight twang and low ABV so you can enjoy more many while still making it through the 4th quarter and the post-game party. |

Notes: Can use altbier yeast (WLP 036) also, but Kölsch (Wyeast 2565 or WLP029) is more attenuative (or also a Belgian Abbey strain, or WLP 810 SF Lager). Could also add some oak cubes for a wood-aged version. Lager for 1-2 months.
No subcategory for this historical style, so I just entered under Düsseldorf Altbier, since this is a similar (but bigger and more complex - smoke and maybe slight sour) beer from Düsseldorf.
