Notes: Fermented with cultured Kveik yeast from Frontaal/Flying Couch brewing: Zoomies Kveik IPA.
Ferment at 30 degrees celcius. Dry hopped after 3 days of fermentation (was already pretty much finished). Bottled after 5 days of dry hopping. Cold stored 7 days after bottling.
Terrific IPA, very juicy and reminiscent of Orange Juice. Fermented to 1.018, this together with the Rye made the beer have a very full body without being too sweet. Was very good up untill 5 weeks after bottling.
Next time mash a bit lower (63 C) to encourage a slightly lower FG.

Øker Maris Otter fra 20% til 35%. Like stor andel Pilsner.
Reduserer hvetemalt fra 14% til 9%.

Øker maltmengde fra 6 til 6,6 kg pga. mer plass i ny maskin.

Dry Yeast: Sprinkle the yeast around the top of the wort and stir well.
Cold Fermentation: Put the lid on the fermenter with the airlock installed (fill airlock 1/3 with water). After 12-36 hours this
mixture will begin to churn and produce CO2. Once you see signs of fermentation, slowly cool temperature of the wort to
50° - 55°F (about 1° per hour). If you do not see any activity after 24 hours, then remove the lid and vigorously stir the wort
with a sanitized spoon. If after another 24 hours you do not see any fermentation, please call us. After 10 days since the wort
started fermenting, the mixture will calm down and the excess proteins will settle at the bottom of the primary fermenter. At
this time, raise the temperature to 60° - 70°F for 2 days to improve flavor. Check the specific gravity to make sure it is within 3-4 points of the FG and then carefully move the fermenter full of beer to a counter top. Be careful not to disturb the sediment. You can move the primary fermenter several hours before you intend to transfer, so the sediment has a chance to resettle to
the bottom of the primary fermenter. Carefully siphon the beer into the sanitized secondary fermenter. Move the airlock
from the primary fermenter to the secondary fermenter. Make sure the airlock has enough water. Slowly cool the beer (over
2 days) down to about 40°F for 3-4 weeks. If the beer has not cleared, you can add Claro K.C. finings for beer.

Single infusion mash at 159 for full bodied beer. Mash out at 170.
Divide dry hop additions into 2 parts, first at 95% attenuation and second for 4 days after yeast have attenuated. Secondary fermentor only needed if not using a conical. Remove from yeast at 95% attenuation (about 1.024SG). |

| Notes: May have added too many grains. Ended up with a final g of 1.070 and 4.8 gal??? Almost a gallon less than I'd expect. Boiloff must be super high as is grain absorbyion. Maybe add .5 gal for absorbtion and .5 for boil off (like 1.8/h boiloff) |
