Notes: Mill the grains and mash at 154°F (68°C) for 60 minutes. Recirculate until your runnings are clear, then run off into the kettle. Sparge and top up as necessary to get about 6.5 gallons (25 liters) of wort. Boil for 90 minutes, adding hops and Irish moss according to the schedule. After the boil, chill the wort to 68°F (20°C), aerate, and pitch the yeast. Ferment at 68°F (20°C). After fermentation is complete, transfer to secondary and add toasted coconut chips and condition for 5 days or until desired coconut flavor is achieved. Then crash, package, and carbonate.

Notes: This beer is very true to style. Saaz would have been better but not essential. The trick is to run the first runnings into the kettle and drop all the hops in. The wort should be around 60C (140F) and allow to stand for 20 minutes. Then boil the wort until reduced by around 1/3rd to 1/2. This will caramalise the wort which will darken considerably and lock in the very important spicy hop flavours and the rich melanoidins that Czech lagers are known for. Use a Czech yeast, HUGE pitch and ferment cool at 8C (45F) Attention to detail ALWAYS with lager beers especially Czech which is the hardest to brew. NO LATE HOPPING FOR THIS BEER, YOU'LL FUCK IT UP.
This is a true golden lager beer in every respect. Colour is right, hopping is right, melanoidins perfect. Closest commercial beer is Budějovický Budvar. |
