Notes: 仕込み水に椎茸出汁を使い旨みを増強したセゾンスタイルのビールです。今回はさらに白麹を使用して糖化効率を上昇させよりドライな口当たりと、白麹特有のクエン酸の効果で心地よい酸味のあるファームハウスエールを目指します。椎茸出汁は旨味のみを残す目的で煮沸の段階で風味は揮発させ味わいで椎茸を感じることはない設計です。
高知は焼酎蔵もあり椎茸農家もあるため麹も椎茸も地場産のものを使用できる可能性もあります。 |

Notes: **Brewed 6/28/22 - Too much water. Reduce sparge water volume and careful to only start with 6.5 or 7 gallons max. Did not boil off as much as expected even with lid partially on with 2 clips.
Resulted in 1.066 per TILT and 1.072 with hydrometer at around 6.5 gallons instead of 5.5. |

The Pacific North West of America grows remarkable hops and El Dorado is a killer example of this. A new hop on the block, loaded with tropical fruits, pear, watermelon, candy floss and stone fruit. El Dorado works well on its own but pairs up brilliantly with a higher alpha hop for bittering, saving your El Dorado for aroma and flavour.

Think banoffee pie; loads of creamy sweet banana, and sticky warm toffee. This beer is super complex, and one for the sweet-toothed! Boil for even longer to get more caramelised flavours in the beer.
