120min boil, add hops every 5 minutes
Pitch 2.5l WLP007 starter in crashed wort
Oxygenate with pure oxygen for 2 min/carboy
When at >1040, pitch a metric shit ton of 099, ~2-3 trillion cells
Oxygenate for 5 min/carboy
Add 8oz of sugar every morning and night until fermentation slows, oxygenate every night
Keep beer under 1030 at all times
Put in secondary for 3-4 weeks
Goal: over 23%, would love 25.

Increase temp to 22 degrees for 7 days
Add first dry hop for another 7 days
After 3 weeks, rack to pressure barrel with second dry hop. Purge with co2 and leave for 10 weeks.
After 10 weeks aging, rack into a new container and dry hop for another 2 weeks with the last dry hops.
Cold crash after 2 weeks.
Transfer to a container (keg?) and force carb (dont think it will naturally carb after such a long period of time) |
