Notes: Very blond grain bill with strong sacch yeast (Omega Kviek) ferment backed with Brett-Omega ATB and farmhouse slurry to perpetuate home style. Hops are all noble in my opinion with add-on of Mandarina Bavaria which I think has this noble possibility as well....Result? Blond Noble Hop-forward Brett ale which is clean strong and very drinkable....Sonnenuntergang designates Vienna forward grain bill with noble hops 2.0...I am drinking now (now!!) and it is sooo good!
BTW, 20 days in a 60L Speidel fermenter and directly to the Corny kegs.....no secondary....gas it and go!!
Other notes: the 3 oz Saaz at 90 minutes gives the beer a sublime tarry backbone not unlike a Chateau Latour Medoc Bordeaux wine....truly! LOL!!!!! |

Notes: This came out pretty good - not what I expected though. Pre dry hop, tasted amazing - orange, tangerine, pineapple, general citrus. After the dry hop with Amarillo and Cashmere, picked up on some heavy pine/herbal character. Caught me off guard but after doing some research, I think the Amarillo brought that to the table. Still a good beer, but won't be using Amarillo anytime soon.
In regards to the honey malt, I think i'd drop that to 1% for future use. It made the beer a tad too dark for my liking. Still tasty and not overly sweet, but I was shooting for a particular color and I surpassed it.
UPDATE 6-11-2021 : The herbal/piney character that I was picking up has aged out pretty nicely. It's still there slightly but not like it was. It has become like this big fruit salad almost. It's definitely still got the orange, tangerine, pineapple flavor but also like a peach and apricot thing kind of going on as well. I think this is aging and blending together beautifully. |

Notes: - Bring 7 gallons of water to strike temp of 161.1; add chemicals to water as necessary
- Add grain and strike water to mash tun; mash at 150 degrees F for 60 min
- 30 min left into mash; bring another 5 gallons of water to 170 degrees F for mash-out; add chemicals as necessary
- After 60 min in mash tun; sparge wort until clear and empty wort into boiler
- Add 3-5 gallons of mash-out water to mash tun and stir to cleanse grains; let mash-out sit for 10 min; after 10 min, empty mash-out wort into boiler until a total of 6.5 gallons of wort volume is realized within boiler
- Take a pre OG refractometer reading
- Boil wort for 60 min
- Add Lactose to boil with 10 minutes remaining in boil process
- Add wort chiller to boil with 10 minutes remaining in boil process; this will decontaminate the chiller
- After boiling for 60 min, chill wort down to 170 degrees F and follow hop additions per whirlpool instructions in recipe
- After whirlpool process is complete, chill to 68 degrees F, take an OG refractometer reading and move wort into fermentation vessel
- Pitch yeast into fermentation vessel
- Add dry hop additions within fermentation vessel per recipe instructions
