| Notes: Brewed 8/23/2021. This was an experimental brew to test Philly Sour yeast. Didn't turn out that great. Low mash efficiency and over attenuated. Flavor of biting into a grapefruit seed. pH was high - 3.9 and FG low - 1.004. Added lactic acid to get 3.5 pH and cherry flavoring to hide the bitter grapefruit flavor. Now drinkable. |

Notes: 10-minute mash rest at 108-112°F
Mash at 153°F for 60 minutes or until conversion is complete. Boil for 60 minutes following the hops schedule. Pitch the yeast and ferment at 68°F for 2–3 days, then allow the temperature to rise slowly to 74°F by the end of fermentation to ensure full attenuation. |

| Notes: No Sparge Method. Brew day went smoothly. Hit all predicted gravities. The 20 minute planned Hersbrucker addition MAY HAVE BEEN 0.5oz Perle. Both hops containers were on table and I don't recall which I used. Pitched 3 packets of rehydrated 34/70 into 55* wort and oxygenated 60 seconds. Signs of active fermentation in 12 hours. Fermented in Anvil Brew Bucket in 50* garage. Saved 1.5 quarts boiled/cooled wort for priming in keg. |

| Notes: This porter is goofy hot, but draws you in with it's sweet heat goodness. Smoky notes from smoked cherry malt and chipotle peppers dance with cherry flavoring, and drench the palate with lava-like chocolate. Hops addition is quite low as the bitterness of the chilies will contribute to overall flavors. A mesmerizing marriage of London Porter sensibility with Yippie-ki-yay American Cowboy adventure. |
