| Notes: The cascade and citra hops are added to the APA in hopes of imparting a tropical phenolic fruit character to the beer. My favorite pale ales have a grapefruit or orange peel (Bell's Two Hearted and Oberon) flavor to them which I am going to try and artificially recreate using hops. |

Very limited batch of 4000 cork and caged bottles with a silk screened label designed by Johanna Basford. Only available at the Tate Modern. For a fresh and fiery hit, put some ginger into the cold conditioning phase as well.

17L start / 12L sparge
Sparge @ 175F
Add raspberries @ 2nd fermentation (using conical so remove trub + keep in primary)
Cold crash end of 2nd (3 days), transfer to keg
Carbonate @ 2.8/3.0 (~15psi @ 37F)
Great colour.
Note: Pasturize raspberries before adding. Natural yeast has created a sour quality as it ages,
not bad but not what intended. Use big bag for raspberries & seeds or messy.
I didn't rack to secondary - using GF conical so just popped them in!

Notes: A pretty easy single infusion mash works great for this beer. Hold your temperature around 153°F for 60 minutes. Raise your temperature to 168°F and sparge slowly with 170°F water.
