strike too hot (70) added 2l cold water drop to 69C
Mash tun max capacity - 21litres water + 6kg grain
During boil both hops bags opened, so hops in the fermenter
killed the yeast in the starter, so replaced with bakers yeast. v active within 3 hrs of pitching.
added 2.4oz white sugar - dissolved in boiling water then cooled, added to fermenter before wort. Good carbonation, evenly distributed.

Notes: Steep 60L Crystal and German Chocolate Rye for 30 min. at 155F. Add (3) Lbs. DME, bring to boil. Add 1st hop addition of .5 oz. citra (13 AA), which stays for total of 60 min. wait 45 mins. and add 2nd hop addition of .5 oz. citra, which stays for a total of 15 min. Add remaining (3) lbs. DME and (2) lbs. honey at 5 min. mark, stir in well, then add wort chiller for the remaining minute.
Chill wort to 70F, add tap water for total of 5 gal. water. Add hydrated yeast and ferment in 6.5 gal carboy. |
