Notes: This recipe is Vienna Lager style but boosted a little bit in IBU to counter balance the malty side.
Adapt the mash volume with the dead volume of your tun.
I use a Klarstein 50L brewing machine which has 6.5L of dead volume under the tun basket => take it in account for the mash thickness :
Strike water volume at mash thickness of 3 L/kg * 5.15kg + 7L = 22.5L (new mash thickness = 3.7L/kg)
Sparge water = 9.2L
Total water = 31.7L
Lost water (mash)= 3.6L
Lost by evaporation = 4L
Lost in the kettle = 2L
To go in the fermentor = 22.1L
Fermentation at 13°C during 2weeks min.

Notes: Steam/ boil rice in grain basket brewing salts and 24qt water for 15 mins until done. Add remaining 12 qt strike water and bring down to strike temp. Pull off 7 qt of water to reserve for sparge.
Mash for 155 for 45 mins.
Boil for 60 min.
Lager yeast at 70F under 5-10 psi for 1-2 weeks.
Transfer to secondary with finings and cold crash and lager around 33 - 36 F for at least 2 weeks.
V2 - sorachi ace at 10 min for flavor/mild bitterness. Added Munich malt for color and sweetness. Corrected water amounts. Changed yeast back to German. Novalager too dry. |

Notes: After active fermentation is complete, puree 5 lb mango* in a food processor and boil for 15 min, then add it to the empty secondary fermenter. Rack primary over mango mash in and gently stir. Keg in about 2 weeks. Make sure it tastes almost too fruity, as carbonating and conditioning will cause it to fade.
*I bought 10 lb of mango, which was pretty close to 5 lb of mango flesh after peeling and removing the pits. |

INSTRUCTIONS:
1. Bring initial ingredients to 170F, then start timer at 45 minutes.
2. Simmer at 170F (max) for 45 min. Do NOT boil as it will extract pectins resulting in permanent haze.
3. Smile
4. Primary fermentation 1 week, or until it slows significantly
5. Secondary fermentation 2+ weeks to complete dryness. Excess residual sugar = bottle bombs.
6. Wash apples thoroughly, cut into thin slices. Keep stems, seeds and peels for tannin content. Rinse with StarSan solution.
7. Check that F.G. is in the range 0.996 - 1.010
8. Priming sugar, use 1/2 cup light brown sugar or honey |

Notes: Bring 2.5 gallons of water to 155° F, add crushed grain in a grain bag and hold for 30 minutes at 150° F. Sparge grain bag with one gallon of 170° F water, add to brew pot. Bring brew tea to a boil, add the dry malt and bittering hops.

Boil for 60 minutes add hops, Irish Moss and yeast nutrient accordingly.

Splash 2.5 gallons cold water into fermentation bucket.

Cool wort to approx 90° F, then add to fermentation bucket. Add yeast when wort has cooled to below 75° F. Ferment at as low as 68° to 75° F, for 2 weeks.

Prime with 3/4 cup corn sugar and 2 cups water boiled for 10 minutes, add to wort, stir gently and bottle. Carbonate at 70° to 72° F for 3 to 4 weeks. |
