Notes: This beer is intended to be hazy, do not add any clarifying agents (EDIT: I copied this recipe from someone else. This is a myth - hazy IPAs should be hazy from protein interactions, not "shit floating around." Virtually all beers benefit from Irish Moss). North East IPAs are notoriously dry hopped

Notes: CONSIDER DROPPING ABV TO 7%. TAKE 4 LITRES AND FERMENT WITH DIFFERENT SAISON YEAST PLUS INNOCULATE
Added for last 5min of boil - 4-5g each of homegrown sage, thyme and rosemary (to 10 litre batch)
Brewed and cooled on outside shelf of brewshed. Dust from road mitigated somewhat by covering top of kettle with wet (sanitized) towel.
Recovered 9.5 litres into plastic fermenter (had been sanitized with extra strong iodine after having starsan in it for a few weeks. Rinsed with starsan ... and left a lot of foam in fermenter before adding the wort and yeast). Used around 30 sec of pure o2. Cooled wort to around 25C - warm day here.
Kept in wardrobe (`18oC ambient). Rapid fermentation. Transferred after 6d to ferm chamber in brewshed to raise temp to 23oC for a few days to 'dry it out' ... now shows 93% attenuation! Aroma is great at start of crash cool ... flavour will benefit from sedimentation.
Put together a few comp bottles, after only 8d fermentation. Will likely get a lot of sediment over the two weeks whilst they wait (entered one into saison, other into herb beer).
All hops had been added to spider - utlization may not have been as high as shown (ie IBU may be much lower.
Note that I may have had some water leak from the hx into the boil kettle during chilling. Was v slow chill because of shallow volume (<half of the chiller was in the wort)
Tasted good after 2wks. Crash cooled over ~6h, down to ~10oC (rushed cos I needed the fridge for next batch, wee heavy; note that i also rushed this step because of O2 concerns ... I attempted to take a sample when, unknowningly, the fermenter had droped to negative pressure and sucked through some air through the outlet tap ... percolated through the wort). Added 49g belgian candi sugar to the fermenter aiming for 3.2vol CO2. Got around 15 bottles. |

No aroma frutado baixo da fermentaçao, mas com frutas brancas e amarelas proveniente dos lupulos.
Sabor segue aroma, perfil de frutas brancas com melão e pêra que aprecem bem em primeiro plano, no retrogosto a um cítrico lembrando limão siciliano e tangerina, sem harsh.
Faltou corpo que o tornasse mais juicy, necessário ajustar o trigo e aveia, mais corpo e melhor retenção de espuma.
Não tinha o objetivo de biotransformaçao e sim sair do clássico juicy e frutas amarelas.

Notes: This beer is based on the Julelager from Bakke Brygg (RIP).
Cool to 9-10 deg C for pitching
Run 11 deg C until gravity reads about 1,035-1,040 (7-9 days) and start to increase temp 2 deg pr 12 hours, up to 19 deg C. Keep it there for 6-10 days and check for diacetyl and acetaldehyde. Once clean, run the temp down 3-4 deg C every 12 hours. Let it stay at 1 deg C for 5 days to drop clear.
Prime with somewhere around 80-100 g table sugar to account for some C02 being absorbed back in the beer from the headspace during cold crashing. Replace the standard hose-in-a-beer bottle airlock to a S-shaped bulb lock to avoid liquid being sucked back into the fermenter.
Leave the bottles at 20-23 deg C for carbonating for 2-3 weeks before storing at 8-10 deg C. Keeping bottles in the fridge 5 days or more prior to consumption, helps the precipitation of most particulate matter and produces a clear and crisp lager beer experience.
Alternative yeast: WLP830, WLP838, Saflager 34/70
Notes:
The mash schedule only yielded 1.052 in our brewolution masher. Normally we get an efficiency of 75% with this setup. Ended up adding 250-300 g light DME and got 1.060 in the fermentor. Might be that the 72 degrees step could have been extended to increase efficiency, a little lost here?
We first added 2 g of the christmas spices, and got little to no aroma at boil. Decided to add 10g more of each to push it into the X-mas groove a little better. Those 10g only got about 5 min at boil. Only about 8g of the nellikspiker was crushed, the rest was whole seeds which probably didn't transfer over to fermentor.
This didn't go very well, unless you love the taste of nellik in beer. It is X-massy alright, but reeks of nellik. We'll probably bottle a case or so, just in case it smoothes out with storage.. But other than that, the taste now before bottling isn't very promising. It definitely was a mistake to add the powdered nellikspiker. Totally overwhelming. |
