PH target should be 3.2 - 3.4 post fermentation (May need to dose lactic acid to attain this post fermentation)
Add 3 lbs.
cherry purée on day 4
Add Cherry extract to taste after filtration. We used More Beer cherry extract.
Dosage was post 2.6 carb. Added 2 oz per 5 gallons directly to keg. circulated for 10 minutes post addition, then topped up carb. |

Notes: Glem alt du vet om Meksikansk Cerveza. Dette settet leverer himmelhøyt over de tynne butikkvariantene som kjøpes på blanke flasker. Dette er en real tørsteslukker på varme dager. Det gjelder bare å brygge nok, for denne vil bli populær også blant de i husstanden som tror at de ikke liker øl
Har tilsatt litt risskall for å sikre at skyllinga ikke skal klogge.
Dryss tørr gjær i 10 ganger sin egen vekt av sterilt vann ved 23C ± 3C tilsatt gjærnæring VLN1000. Når tørrgjæren er omdannet til krem (dette tar ca. 15 til 30 minutter), start forsiktig omrøring i ytterligere 30 minutter. Hell deretter gjærslurryen i gjæringskaret.
Safale anbefaler 100 g tørrgjær
Gjæres på 10-12 C i 14 dager
Øk temperatur gradvis til 15-16 C i ytterligere 7 dager
Overfør til kegs for lagring. Lagres kaldt (2 gr) i 6 uker. Karboner til 2.6 vol.
Eller overfør til flasker. Bruk 6-7 g/l sukker til karbonering. Hold i romtemperatur i 10 dager. Deretter 6 ukers kald lagring.
Alternativ gjæringsforløp:
Dag 1: Kjøl ned vørter og tilsett gjær på 10°C. Hold denne temperaturen til neste steg.
Dag 3: Øk temperaturen til 13°C
Dag 4: Øk temperaturen til 17°C
Dag 5: Øk temperaturen til 19°C
Dag 7: Senk temperaturen til 5°C (Cold Crash)
Dag 14: Ølet er klart for å tappes på fat eller flaske. |

Måtte stå 3 uker og litt for å få ut det siste av diacetyl, og for avslutte den siste ploppinga.
Knadde/vred opp humleposen/sokken en gang etter fem dager og igjen da jeg tok den ut. Ble skikkelig fin og fruktig humlesmak. Knallbra brygg! Fikk noe lavere OG enn jeg hadde beregnet i oppskifta og kom ut med ca 4.9% ABV. Men resultatet ble fyldig, rik smak og balansert bitterhet. Ikke overveldende, svært lett å like! |
