Notes: I brewed this with my daughter who fell in love with "The Ghost", a Gose made by Magpie Brewing of Seoul, South Korea. This is in no way a clone of their award winning brew ... more of a homage. Thank you Magpie Brewing for providing a fun and enjoyable place to go for my daughter while she was stationed there.
I kettle soured 24h@95F with the GoodBelly and while I hit the desired sourness, a surprising amount of the berry flavor came through. Used bath chiller to maintain 95F throughout fermentation. Grain-to-glass in 7 days.
The Gose came out really nice and I'll brew it again but with a neutral source of lacto. The berry muted the tangerine flavors.
Definitely a summer beer.
