Notes: Added 2 tabs K-Meta to mash.
After 158* mash rest and recirculation, filled kettle to 9.5 gal then transferred last 2 gal runoff to side kettle to condense down to ~0.5 gal.
Main kettle w/ 9.5 gal was heated to ~170* then rested for an hour during a work meeting as 2gal caramelizing boil simmered on stovetop.
Caramelized wort was added to boil kettle later for ~10gal pre-boil volume.

Notes: Color and Toffee/Caramel flavor should come from combination of Munich and choice of Crystal/Cara malts. CaraRed would be a great choice as would a combination of Crystal 20/40 and Victory or Biscuit. RedX might substitute for all or part of the Munich but the flavor combination of RedX may not be as pleasant as Munich.
Roasted Barley or similar should be used sparingly so as to make a contribution to the color without adding too much roasty flavor.
Use of Acidulated malt for PH management is optional.
Water chemistry additions should be made to target a fairly balanced profile that leans towards a malty lager but utilizes enough gypsum to make the hop flavor hold up well.
Step mash is routine for me but a single infusion of 152 would probably do very well.
Yeast choice could be S-04, Nottingham, WLP-004 or similar liquid Irish Ale yeast. |

| Notes: Made a couple changes as I went. Steep was 60 minutes all grain products. Raised temp to 170. 15 minute gradual increase full temp for last 10 minutes. Boil temp took 35 minutes to reach added .5 oz hops for 60-minutes then added remaining .5 oz for 1 minute removed from boil allowed to finish last 30-mintes. Chill to 78 28-minutes pitched yeast put in fridge to reach 56 deg fer. |

Notes: Fermented very quickly at 65℉, move to secondary after 6 days. At
day 7 started the cold crash, added gelatin mixture 1/2tsp w/ 1 cup of pre-boiled water cooled to 150℉ for mixing in gelatin, then slowly stirred into beer (5 gal).
Dropped temperature to 35-38℉.
Gelatin and cold crash really helped pull more solids from the beer, and the clarity improved greatly. Continued to lager...but will age more.
Day 14, kegged.
Beer looked very clear at kegging date, and the following day took samples for tasting. Actually, a couple of samples for tasting...LOL. Not fully carbed up, but oh so good. |
