Notes: Grain Bill was derived from a Bloodline Blood Orange Recipe
Hops for the boil were a combination of what I had left from prior batches.
Added Citra for the Dry Hop.
Kumquats...Thoroughly rinsed and then soaked the whole kumquat in a One Step Sanitizer for about 5 minutes then used a colander to rinse them. Stored in the freezer to be added later. Added whole frozen Kumquats to the secondary with the dry hop in a fine bag. |

Notes: 60 minute boil. Chill to 18°C and pitch yeast. Oxygenate for 60 seconds. Ramp primary 5 days up to 24°C until reaching a terminal gravity 1.013. Rack to secondary 10°C for 2 weeks. Bottle prime with Simplicity (candi sugar.) at a rate of 12gr/ltr. Ready in 4 weeks. Best after 6 weeks.
Store very cool (< 10°C) if storing longer than 2 months. (Belgian Pale’s are not a long term storage ale). |

Notes: Fill kettle with 3 gallons of water. Bring temperature to 150-160 degrees.
Place grain bag in kettle of water and maintain temp for 25 minutes.
Remove grain bag from water.
Add DME and Honey; bring kettle to boiling.
Add 0.2 oz Kent Golding hops and boil for 50 minutes.
Add 0.1 oz Kent Golding hops, 2 oz dried lemongrass, 0.5 oz coriander, and 1 tsp of kosher salt. Boil for 15 minutes.
Cool wort to below 70 degrees. Once cooled use auto-siphon to transfer wort into 3 gallon carboy or fermenting bucket.
Fill carboy with filtered water to 2 gallons.
Pitch packet of Danstar Belle Saison Yeast into carboy. Make sure yeast is evenly distributed.
Fill air-lock half way with water and place with stopper in carboy. Place in dark room for fermenting.
After one week transfer to another carboy for secondary fermentation.
2-3 weeks later dissolve 2 oz priming sugar into 1 cup boiling water.
Transfer beer into bottling bucket using auto-siphon and add priming sugar. Use auto-siphon with bottling wand to fill bottles.
Wait at least two weeks to drink. |

Notes: The chocolate malt was ground fairly fine, and imparted quite a bit of bitterness to the final product. IBU is likely higher than what the recipe calculates.
Toast the coconut at 300F for an hour, turning a lot to avoid burning. Try to time it so you can add it hot to the primary and avoid contamination.
Also, use a bag for the coconut. I left it loose in the primary and had a lot of issues with it clogging my siphon tube when racking. |

Add Lactobacillus (32 oz. Mango GoodBelly) until Ph drops to 3.3/3.4
Time to boil for 70 min and then cool to 180˚ add Amarilo and Citra Hops for 30 min at Whrilpool hopping
Chill the wort, aerate, and pitch the yeast. Ferment for 7/10 days
