Mousse: après 2 semaines, belle mousse avec une fine robe et bien carbonatée.
Nez: Ananas, Mandarine, type Agrumes donc frais.
Goût: Raffraichissante au goût un petit peu herbacé en fin, mini touche de fruits tropicaux en début, fruits à coques léger (pale ale et caramel crystal)
Amertume: légère mais reste sans tanins ni trop longue en bouche, bien équilibrée.

Notes: Added some extra steeping grains from unused inventory:
8oz. Briess caramel 40L
7oz. Briess Carapils...should increase head retention.
These will raise the ABV slightly above the recipe 4.6ABV.
Changed Hop additions. Recipe called for 1Oz. Willamette at 60 min. and 1oz US Golding at 30 min. Changed to .75oz Willamette at 60 min; .75oz US Golding at 30 min; added the remaining hops at 5 min to get some additional aroma from the hops. This also reduced the IBUs from 54 to 43...more in line with a traditional Irish Red Ale. |

Whirlpool hops from around 190 to 130 over about 30 min.
07/12/2018 Fermented at 65 f for 5 days. At 1.008. Very tasty right now. great citrusy profile with some light esters. Raising to 68 for D-rest/finish, then to crash to 34, dump yeast and carb. |

Notes: Half of this batch is for a nice lady who gave me a pound of dried and vacuum sealed Mystery Hops from her friend's backyard. Variety and AA unknown. 7 AA is just a guess.
The other half is for me. All mine! Bwahahaha.... ;-)
O.G. : 1.053. Right on the nose!
Mystery hops are dank, spicy and earthy. Decidedly NOT citrusy. A good fit for a malt-forward ale. Added some late addition Simcoe for a bit of pine. |
