Single infusion mash at 155°F (68°C) for 60 min., targeting a mash pH of 5.4. Mash out at 167°F (76°C) for 10 min. Lauter.
Boil 60 min., adding hops as indicated. Chill, aerate and pitch yeast at 63°F (17°C).
After 10–14 days (or when fully attenuated), cold crash for 3 days at 35°F (2°C). Force carbonate at 2.4 vol. (4.8 g/L) CO2. Cellar 2–6 months (longer tends to be better).

PurePitch (7 Billion cells) was made into starter 48h. Yeast was split in 2 where Batch #1 will receive 2 dry hop treatments (day 4 and day 15) for 3 days each. Batch #2 will receive a single treatment (4 days) @ day14.
I want to compare a single dry hop versus 2 short dry hops.

Notes: - Mill grain twice. Use fine-mesh grain bag to minimize pumpkin getting into the wort.
- Use pie pumpkin and/or butternut squash (if brown ale) about 10 pounds in total weight (to yield 3-5 lb net per 5-gallon batch). Halve the pumpkin, remove pulp and seeds, and place face down on foil lined pan w/2 Tbsp H2O. Bake at 350°F for 90 minutes, then mash into a pulp.
- Take about 1/2 gallon of the hot mash water before adding grain, add it to the pumpkin and stir to break up big clumps, yielding a slurry.
- Add all grains and stir, then add warm pumpkin slurry to the mash.
- After sparging and while boil kettle heats up, move mash bag to over spare kettle, squeezing & letting drain. Add additional wort to boil kettle. |
