Notes: Note, if using this recipe, that the mash/sparge volumes accommodate about 1/2 gallon of cherry puree added at the end of primary fermentation. My target was to keg 5 gallons.
Add cocoa powder at flameout. A little worried about 8 oz of cocoa, may add 1/2, test and add more if needed, just in case.
Update here, added all 8oz @ whirlpool. It seemed like all the cocoa dissolved, but after the kettle drain the trub cone was very chocolatey. I added another maybe 1oz or so directly into the fermenter. Just in case.
Adding yeast directly onto wort, might rehydrate one pack and sprinkle the other. Rehydrated both packs of yeast because my fermenter volume was a little low, so rehydrated in 1/2L of H20.
Plan to ferment somewhere in the low 60s. Started at 62.
Add cherry purée as primary fermentation ending. Adding the cherry brought the gravity from 1.014 back up to 1.027, and then very quickly started fermenting back down.
The ABV on this is closer to like 5.2-5.8% (depending on the sugar in the cherry purée used). The recipe builder doesn’t calculate it because it’s a fermenter addition.
As I was kegging this up from the fermenter, about the last 1/2 gallon, or top 1/2 inch, was just sludge. I only ended up getting about 4.5 gallons into the keg to try to avoid getting most of the sludge in the keg. I guess next time I would add another 1/2 gallon of volume overall to yield closer to 5 gallons in the end.

Notes: Halve and de-seed sugar pumpkins. Lay cut-side down on parchment paper and roast in oven at 350 for 1 hour. Let cool. With sterilized equipment, remove pumpkin flesh and blend. Pour in carboy ahead of the wort.
Caution:Maybe this needs to cold crash. After the first few pulls, it mellowed-out and was quite good. The first pulls probably had the settled spices. I will not change this recipe. For a rye and pumpkin beer, it was good!
Consider racking off of the settled spice into a secondary. |

Mesket på ca 65 grader (glasstermometeret viser 65, kjelen viser ca 61). Mesket i to timer, deretter skyllevann på ca 78 grader i ti minutter.
Kokte i 90 minutter, kjølte deretter ned til ca 17. Ca 76% effektivitet. Brukte humlepose i kokekjelen. Vispet inn luft med røreskjeen, og tilsatte starter med to pakker wlp029. Lagde 1,5 liter starter, dekanterte før pitching. Gjæringsskapet startet på 14,7 grader, men TILT sa 18,8. Endret kjøleskapet til 16,4 grader ett en eller to dager.
Tok en temperaturkontroll etter 8 dager. Tilt sa 18,8. Kjøleskapet stilt inn på 16,4. Termometeret på konisk gjæringsdunk sa 15. Målte med glasstermometer oppi ølet, og det sa også 15.
Dag 8: økte temp i kjøleskapet fra 16,4 til 17,5 grader.
Dag 9: økte temp i kjøleskapet til 18,5 grader + tømte beholderen under
Dag 10: økte temp i kjøleskapet til 19,5 grader
Dag 11: økte temp i kjøleskapet til 20,5 grader
Dag 12: økte temp i kjøleskapet til 21,5 grader
CC siste to døgn, temp falt til ca 6-7 grader. Flasket dag 16. TILT viste 0.998, men hydrometeret viste 1.010. Kokte sukkerlake på 7 dl vann og 135 gram sukker. Helte oppi 21,5 liter øl, rørte forsiktig med desinfisert stekespade.
Flaskene sto i romtemperatur fra 28. november til 12. desember, deretter kald-lagring.
Smaksnoter:
Smakte 2-3 flasker 13-15. desember. Den smaker litt "ungt". Litt for dårlig karbonert, litt for mye fruktige estere, litt gjær-smak. Burde den stått lenger i gjæringsdunken?
Februar: nå har den satt seg fint. Ingen usmaker, greit karbonert. Litt lite skumfasthet. Neste gang vil jeg ha litt mer humle, både bitterhet og smak, og litt mer karboneringssukker.
