| Notes: Brewed 8/21. OSG 1.063. Brew went well except when we hooked the fermentor up to the glycol chiller we forgot to put the thermostat into the fermentor. We set it at 68 degrees but it didn’t know that so it went straight down to 38 degrees. Took most of the day Sunday to warm up, brought it outside, put heat and heating blanket on. It started to ferment around 7 pm on 8/22. Fermenting like crazy now, dropped 2 lbs of Citra Monday morning around 11am. Crashed Friday night at 1.013. |

Notes: Shorter days and cooler months are extending our drinking arm towards luscious styles of substance, simplicity and layered diversity. These Qualities are found in this historic Export Stout recipe based on recipes from the archives of ye' old Barclay Perkins Brewery.
Note the simplicity of the grain bill - There is a symbiosis of the robust grains, single delightful resinous Fuggles and expressive English Ale Strain.
This Recipes develops aromas of Fresh espresso, bourbon steeped plums, liquorice and molasses. Flavours of burnt chocolate, classic roast malt flavour, touch of bonfire marshmallows. All supported earthy bitterness from the Fuggles.

Made a 1.5L yeast starter, this was very old yeast, hopefully, the beer will be fine.
Pitched at 64 deg. F., and allow temp. to slowly raise to at least 72 deg. F. over the next 4-5 days. Then allow to rest for 1 week at 75 deg. F.
Crash cool to 55 deg. F. for 3-4 DAYS, then bottle. |

Coffee and Chocolate:
Grind best quality dark roast and add 2oz to coffee press, fill with 12oz water, cover and put in fridge overnight. Plunge it and strain straight into secondary with cocoa nibs - rack beer on top.
