Brew day. Shooting for 5.5gal into the fermenter, only got 5. OG=1.076

Pitched rehydrated US-05 at 6:45pm into 18°C wort.
12-10-17
Transferred to keg and set to 30psi. FG = 1.011. Expected 1.016. I adjusted attenuation of yeast to match final results in this recipe.

Lowered gas to 10psi.

Still have a little of this left in the keg. Was just a touch sweet for my taste, but still delicious. Very smooth. No hint of the 8.5% ABV, great head and body. Make again with .75lb of melanoidin. |

Tasting after two hours in the keg: Very tasty.. Full bodied for the strength. Slightly under carbonated, as expected. Good balance between malt and hops. Some sweetness, but not cloying, probably drops of over the next week or two.
