Notes: *Split the yeast half in 5 gallons and half in the other 5 gallons.
**Half of the batch, the strong ale M44, recieved the 24 ounces of raspberries with primary fermentation and the other, M42 recieved no fruit.
***The entire batch recieved the cocoa powder and vanilla extract at 5min left in the boil.

Notes: Start with 6 gallons of water at 163f.
Add lactic acid.
Add corn and wait for it to drop to 152ish.
Add grains.
Mash at 148f-150f for 90 minutes or until all starch is converted.
Strain and sparge back up to 6 gallons.
Add nutrient.
Heat to 170-180 for a bit to pasteurize if you want.
Cool to under 80f.
Put it in a fermenter and add yeast. |

Notes: Shorter days and cooler months are extending our drinking arm towards luscious styles of substance, simplicity and layered diversity. These Qualities are found in this historic Export Stout recipe based on recipes from the archives of ye' old Barclay Perkins Brewery.
Note the simplicity of the grain bill - There is a symbiosis of the robust grains, single delightful resinous Fuggles and expressive English Ale Strain.
This Recipes develops aromas of Fresh espresso, bourbon steeped plums, liquorice and molasses. Flavours of burnt chocolate, classic roast malt flavour, touch of bonfire marshmallows. All supported earthy bitterness from the Fuggles.
