Notes: Mash in @ 17:13 with 8 l 73,3 C water, = 66 C.
After 1.5h additional water to reach 72 C.
Then after half an hour, collecting wort.
Spelt flour used instead of the flakes spelt in the list.
Yeast (Lallemand Abbey) did not take off after 1.5 days, was old. Pitched a pack of MJ M41. Started to ferment. M41 is diastatic, so the time in the fermenter will be 3 weeks. Started on the 27.06.2021
Bottled 18.07.2021, fg was 1.04
Turned out reaaally good. Tastes like a much higher fg. Only thing is, it has quite some alcohol now.... carefullnes is important :D

Notes: This recipe and brewing process is aimed at achieving a crisp lager-like festbier with a balanced malt character that isn't too malt forward with light toast and bread notes and clean (or absent) fermentation character. All while fermenting with Kveik yeast!
BIAB single infusion no-sparge mash at 152°F for 60 minutes. Mash out rest at 170° for 10 minutes. Boil for 60 minutes following hop schedule and adding yeast nutrient (with DAP) and whirlfloc tab with 15 minutes remaining. Chill to 60°F and pitch 2L starter of Lutra and Clarity Ferm. Free rise to ~68°F. Let beer condition in primary for 1 week at room temp after terminal gravity is reached. Cold condition after packaging for minimum of 3-4 weeks before consuming.
Note: I am in the process of simplifying my brewing process by reducing water wasted during chilling, skipping the cold crash step, and avoiding going further than 10°F below room temp during fermentation. |

Notes: Dusseldorf alt is an old German style fermented at 60-65F;conditioned at 50-60F. Compared to N. Europe alt it's slightly more bitter with similar sweet malt character. Bittersweet, nutty, dry finish reflects assertive hop and complex malt.
Best found at Alstadt (old town)in Dussel.
Turbinado in boil was a vanilla specialty sugar from Whole Foods. |
