Notes: Weigh out honey and mix into 4L of 80c water to blend into fermenter water. Target blend for 21c and start fermentation there
Ferment at 21c and let it free rise
Aeration with aquarium pump and stainless stone
14g yeast nutrient and ascorbic acid at pitching (Omega Propper Seltzer nutrient)
14g 3rd day of fermentation after degassing
Rack to 2ndry with thawed frozen peaches in sanitized bag
Acid blend or Malic Acid - shoot for PH of 5
Also add 60ml (2oz) each of natural peach and natural strawberry flavouring just before packaging
Force carbonate in keg at 3c - 30 lbs pressure for 24 hrs then drop to 12- 14lbs for serving |

Notes: # Morse
This is beer uses the British hop Endeavour. It's named after TV detective, Inspector Endeavour Morse, who really liked his English Best Bitters.
This uses ESB yeast which has a high flocculation rate, it's best to pitch a well grown starter.
## Tasting notes
Dark ruby red in colour with a white head on pouring. White lacing stays around edge of glass while drinking. From the aroma I get quite a lot of fruity esters from the ESB yeast and some roasty malts. On tasting, there is a lot of roast flavour for a bitter, this is probably pushing the limit for the style. Also, a lot of fruity, maybe red berry flavours. Medium bitterness and a little caramel sweetness. Great beer and flavorful but that makes it a little less drinkable which is not to style. One of my favourite recipes. |

Notes: Bring wort to a boil after collection, turn off and adjust ph to 4.2-4.4.
Add Starter of LactoBacillus plantarum for 24-72 hours to achieve target PH. Pre-Boil PH: 3.25
15 minute boil without hops then add S-05 and let it ferment normally.
Add 20g of Cascade in dry hopping for 3 days. Rack once fermentation is complete and bottle normally.
