Notes: It's been too long since I've had a Frootwood; this was built based on what I could remember!
Oats give it a very thick mouth feel, the wood will come through with age. Keep it light on the lactose so you don't lose the tartness of the cherries.
Scott informed me Drain Red Tart Cherries water, Puree with device, Freeze Cherry Puree to Kill Bacteria before Late Addition In Fermenter Last 2 to 3 days.
For the Bourbon Wood Chips he recommended leave in fermenter for 2 months |

Notes: Single infusion mash at 152°F (67°C) for 60 minutes. Boil for 60 minutes. Ferment at 68°F (20°C), raise the temperature to 72°F (22°C) the last few days. Cold crash, rack the beer off of the yeast, add 2.6 ounces (74 g) of coarsely ground coffee and 3.9 ounces (111 g) of cacao nibs, steep the coffee and cacao nibs at 32–40°F (0–4°C) for 3–5 days (or to taste), rack off of the coffee grounds and cacao nibs, keg or bottle.

- 4 cups water to 2 cup DME, boiled for 10 minutes cooled to 66 degrees F and pitched.
++ 3 hours later blowing off
Mash at 153 degrees F for 75 minutes
- Strike to 168 degress F
- Total --> 7.15 gal
- Mash --> 4.65 gal @ 168 degrees --> first 75 min, vorlauf, drain to kettle
- Sparge --> 2.5 gal @ 181 degrees add water and FWH, mix, vorlauf, drain
- Kettle --> 6.5 gal
- FWH during runoff immediately after vorlauf, steeping while we sparge

Ferment at 20C for 7 days, lower temperature to 16C and add dry hops. After 5 days lower the temperature to 2C, add gelatine. Bottle after 2 days. |
