Notes: Steep grains in 1 gallon of 152 water for 30 mins.
Raise to 168 and rinse steeping bag. Add 6 gallons of water and boil. Turn off heat and add DME in batches, stirring to dissolve. Boil for 55 mins. then do a whirlpool, stir 5 mins, add hops and steep 30 mins.
Chill to 65 and pitch yeast. Ferment at 68 . On day 4, add dry hops. Ferment for 6 more days.
Could also use 8.8 lb of two-row pale malt. Mash at 152 for 60 mins. |

If you find that the beer is too sweet, try dropping out the light crystal and/or increasing the carbonation. If it’s too dry, increase the light crystal by a couple of ounces (or grams) or even add ½ lb (227 g) to the base malt to increase ABV. The additional alcohol shouldn’t affect the overall drinkability, but it will add a bit more sweetness!

Notes: Dublin water profile will involve chalk, added to the mash for ease of process; the acidic roasted barley should dissolve this into the water without incident. Flaked rye in place of the traditional flaked barley addition to give a spicy kick in addition to the body from unmalted grain. Balanced bitterness without much hop character. Cool fermentation preferable to avoid unwanted yeast character. Carbonate naturally in keg for best results. |
